传统港式早茶点心之一,炒鸡棒的哟!奶黄包和流沙包都是我最爱的包点。

面包团做法

4oz温水+1汤匙酵母+1汤匙糖搅拌均匀。发酵10-15分钟,待其发酵膨胀起来就可以。酵母务必膨胀起来,做出来的包子才会松软可口哦!

低筋面粉+发酵后的酵母水+剩下的糖+温牛奶,全部倒入厨师搅拌机里,开2档揉面,把面团揉至扩展阶段,加入油,再继续揉至光滑。厨师搅拌机约10分钟就可以。手搓可能要15分钟。

揉好后放入大盆子里盖上保鲜膜放置暖和的地方发酵约1小时至其体积发酵成两倍大即可。

拉开后里面成蜂窝状。可以利用烤箱的发酵功能,95华氏度(35摄氏度)
奶皇馅做法

先把牛奶加低筋面粉搅混至无粉粒,再加入蛋黄,奶粉,牛油和糖搅拌均匀。然后把蛋糊倒入不粘锅里,用中火煮至凝稠成团。

⚠️记得是用中小火煮,还要不断搅拌哦,不然一下子就很容易糊底了哦

煮好后立刻关火盛起待用

把发酵好的面团搓成小球(这个分量大约可以做40个小包),把小球按平成薄块,加入适量的奶黄,然后收口搓圆,收口朝下放。

烧开一锅水,然后放在上面用大火蒸15分钟。

蒸好后关火焖两分钟再拿出来,以免一下子出现热胀冷缩的问题。
