每次做甜品的时候总要准备好很多材料和工具,烤好后的清洗也是一个大工程,但是很多时候我们次只能做一种甜品,其实这样浪费了不少时间呢!下面教大家如何一次无缝衔接同时做好玛芬蛋糕和核桃酥
一直很喜欢吃核桃酥,就去下厨房找了这个recipe,做过一次真的超级好吃,很香很酥。玛芬蛋糕是之前一直都在做的,也是下厨房的recipe,试过很多种这个是最好吃的,之前有一版是不用泡打粉的,这个是需要泡打粉,会比之前那个方子做出来的更好吃,我不爱吃蛋糕的人都忍不住。之前一起做了核桃酥和玛芬蛋糕,发现可以节省时间,时间就是金钱呀~一下子做完两种甜点很有成就感!其实也不算是教程啦,就是分享给大家recipe,加上我自己的改进和心得。
两个方子都特别简单~不需要特别的技巧,生猛地开始动手吧!

我们先做核桃酥
核桃酥
材料:
低筋面粉(我用的是all purpose,低粉是cake flour)250克
碎核桃仁30克,可以稍微多加,但是不要太多,不然核桃酥就散了,也可以用其他的,什么杏仁碎啊开心果碎都可以植物油120克,苑房子食用玉米油,但其实只要是植物油就可以
细砂糖100克
盐2克
鸡蛋液一个
泡打粉(baking powder)5克
小苏打(baking soda)5克
步骤:
1. 烤箱先预热320华氏度,放入核桃仁烤5分钟拿出来放凉备用。再把烤箱调到350华氏度备用

2. 植物油和糖混合搅拌均匀

3. 准备好的蛋液倒入30克搅拌均匀,剩下的放一边准备刷蛋液用

4. 筛入低筋面粉,小苏打,泡打粉,盐

5. 用翻拌的方式把面粉搅成面团

6. 把之前准备好的核桃仁倒入面团揉,可能面团会比较容易碎,并不影响成品

7. 搓成20克的小团放在铺了烘焙纸的烤盘上,用手压成饼状,压的时候小心一点,因为比较容易碎

8. 全部压好的面饼上刷上一层蛋液,放上自己喜欢的干果,我一部分放的杏仁,一部分撒的芝麻,不放也可以,放好后再刷上一层蛋液

9. 最后把面饼放入烤箱烤23分钟。每个烤箱都有自己的脾气,这个要自己试,建议最后两三分钟每隔一分钟就看一眼
接下来就让核桃酥在烤箱里烤一会吧,利用这点时间开始做玛芬蛋糕。如果不是很讲究的,连刚刚用来和面的盆和铲子什么的都不用洗啦~因为我懒哈哈哈
下面准备玛芬蛋糕
玛芬蛋糕
材料
黄油180克
细砂糖150克
鸡蛋3个
牛奶150毫升
低筋面粉300克
盐2克
泡打粉10克
步骤:
1. 打发黄油。原方子需要黄油软化至室温,但是我这样做出来会让面粉出现一个一个小颗粒,口感不好
我改良了一下,把黄油放进微波炉打30秒,千万不要时间长了,那样的话就没办法打发了,软化到图片中这样就可以

2. 放入糖一起用电动打蛋器打发黄油,打到体积稍微膨胀发白

3. 一个一个放入鸡蛋接着打发,要一个一个打,一个完全被黄油吸收了再放另一个打

4. 加入牛奶,不必搅匀

5. 筛入低筋面粉,泡打粉和盐

6. 把面粉搅拌均匀,要用从下往上翻拌的形式,避免出筋

7. 准备好玛芬烤盘,用勺子挖面糊放进玛芬纸杯里,放8分满就可以

全部放好就是这样啦,可以加入自己喜欢的东西,葡萄干、蔓越莓干、巧克力豆都可以,也可以在面粉糊里面加,这样玛芬蛋糕里面也会有啦。我只在表面加了杏仁和芝麻

这时候核桃酥刚好烤好啦!是不是很诱人!味道超级香还很酥脆

8. 刚好腾出了地方,把做好的玛芬放入烤箱,烤50分钟,也是同样的每个烤箱温度不同需要自己掌握
烤好的玛芬蛋糕就是这样啦!!!香甜可口超级好吃!尤其是热乎乎的时候,外酥里嫩
