在晒货区发了晒货,没想到这么多妹子都爱吃卤肉饭!!卤肉饭看起来简单,但实际上需要足够的耐心~我是早上买了菜,下午开始准备卤肉,准备是2~3人份的,大概一共需要三个小时左右~接下来我们就直奔主题,看看怎么做!
准备食材
1.香菇

准备大概十颗左右的香菇,如果是香菇,需要提前泡发,如果是鲜菇就直接切碎就好~(我更喜欢香菇,也更推荐香菇!)喜欢竹笋的还可以准备一些,也好吃!!
2.五花肉

选择新鲜的肥瘦相间的五花肉,大概1LB左右,焯水,切成肥瘦相间的条状,不用害怕肥肉,卤出来很好吃哒~
3.洋葱

准备一个洋葱,切好洋葱,怕辣眼睛的可以切大块一点,之后会炖化的!(切出来看起来多,不用怕,过会就变少了)
4.鸡蛋

煮熟2~4个鸡蛋,去壳~
5.大蒜

大蒜喜欢的可以多加几颗,不喜欢的少放一两颗就够了,也会炖化的~切碎!
6.生姜、八角、香叶、冰糖(辣椒)

怕腻的妹子可以多切一点生姜,再切碎一些,很解腻的!八角3~4颗,香叶2~3片!红辣椒是可选可不选的,我们家爱吃辣,加了两三颗,不影响口感和口味,因为不辣~
做法
1.炸洋葱

多放一点点油,把洋葱炸酥,就剩一小碗啦

2.炸肉

用炸过洋葱剩下的一点底油就够了,肥肉会炸出很多油的,小火,要有耐心!
3.加入生姜八角香叶

炸出肥肉的油以后,加入生姜八角香叶炒香~加入料酒~
4.加入香菇

加入生抽老抽上色,不太会把握咸淡的可以先少加,炖的时候尝尝再加!加入香菇一起翻炒~
5.加入香菇、洋葱、冰糖和开水

我这里用的铸铁锅,这样可以保住里面的水分,加入开水就可以炖啦~
6.收汁

大概炖一个小时左右,如果希望更入味可以再久一点点,加入少许盐,尝尝咸淡,收汁的时候多留一些,泡饭超棒!!
完工!

切开鸡蛋,摆盘,加入香葱就完成啦!喜欢小白菜的可以烫两片(我没买....)或者像我一样炒一盘青菜~
