材料:
油皮部分;15个量
中筋面粉:155克
酥油:46克
糖:30克
水:80克
油酥部分
底筋面粉:90克
酥油:46克
内陷部分
红豆沙或者其他材料:375克(每个25克)

记得去年第一次做的时候刷蛋液的地方无比焦黑,然后也没有什么层次...然后今年不死心在油酥还没有过期前,我又做了一遍...然后我想说,这个其实难度系数不是很大,但是需要强大的耐心....因为....你看下去大概知道了,我比较偷懒也做了2个小时...So....

因为我婆婆不吃黄油,我老公特意买了一个这个,啥油,我就不懂了,但是这个和黄油都可以用!

红豆内陷,可以去买,也可以自己做,自己做呢,过程还是比较复杂的。当然就是泡一个晚上咯,然后加水煮到烂透了,建议用高压锅炖。然后可以放到不粘锅里面加糖加油炒到比较干的状态……然后我没有拍照,大家也可以上网看看其他教程……毕竟今天重点讲包酥啦!

把猪油和低粉,也就是蛋糕粉混合成团,油不需要变成液体,因为我们的手是有温度的,慢慢就会成团,做好的油酥用保鲜膜包好.

把猪油.糖.水.中精粉(面包粉)倒入揉买机或者手肉到,图中毕竟有弹性的状态!不需要像面包一样出膜,但是需要比较好的弹性而且不粘手!

把所有材料分成15份团成球!重点来咯!需要松弛15分钟...所谓松弛就是把所有材料用保鲜膜包好放在哪里15分钟.之后比较好包,因为面团的延展性比较好!

把油酥放到油皮中,慢慢用虎口收紧,一定要收紧不然等下就漏油啦

OK开始工作,先压扁,然后用擀面杖往上一推往下一推,赶成大概手张开的宽度,记得轻轻的.擀面杖涂点油,厚薄要一致!

准备好蛋黄液(只要蛋黄哦,然后加入一小勺的奶调和,一点奶就可以)这样就不会烤完特别黑!还有撒上黑芝麻!

这里需要特别说明一下温度!中国烤箱温度和美国不一样,中国180度烤30分钟。美国的300度烤35分钟!每个人家烤箱不一样,可以观察上色情况,来加减温度!

在烤的过程中如果发现里面上色比较深可以把烤盘调转一头,保证上色均匀!OK……谢谢大家看我啰嗦了这么久!
