首先热气腾腾的麻辣香锅镇楼~~~

虽然说纽约地区的寒冬似乎还没到,但是天气已经开始冷的不要不要,住在新泽西中部大农村的我们,想出门吃一份香锅还得开车半小时!真的是超痛苦。男票已经嚷嚷好几天想吃香锅,还怪我去纽约跟小姐妹吃香锅不打包给他。为这事已经叨唠快两星期了!所以今儿周末在家搜刮了一下冰箱里的剩余食材(大部分是吃火锅的剩料),大展身手一番哟~
材料篇

主料:丸子适量,火锅肉一份,花蟹两只,包心菜,大白菜1/6颗。土豆两枚,厚海带两片。

辅料:
· 葱姜蒜适量,切片备用
· 重庆火锅底料1/4
· 自制蒜蓉辣椒酱一勺
· 老干妈豆豉酱一勺
· 花椒油三勺
· 白醋两勺
· 蚝油一勺
· 芝麻香油一勺
做法
1. 蔬菜洗净,把各类丸子放入开水中解冻,稍软时沥干捞出;厚海带切块,葱姜蒜切大块大片,粗犷一些

2. 烧热水焯菜,肉类和蔬菜分成两锅,肉片变色即可捞出沥干,丸子类浮在水面即可,再放入海带焖煮五至十分钟,另一锅先放包心菜大白菜,变软之后放入土豆,大概五分钟即可,蔬菜捞起来放入纱布袋沥水。(我都是先用冷水过一遍,不然才出锅太烫啦~然后手动挤压纱布,把水逼出来。哈哈)

3. 之后就进入正题,大火热油锅,倒油烧热,然后放入葱姜蒜爆香

4. 放入火锅底料块转小火熬开

5. 放入各类肉,海鲜,丸子进行翻炒

6. 紧接着加入蔬菜,还有海带中火慢慢的翻炒,直到小白菜变软塌下来
7. 到这里开始加料,加自制蒜蓉辣椒酱一勺,老干妈豆豉酱一勺,花椒油三勺,白醋两勺,蚝油一勺

8. 开大火翻炒,最后加入一勺麻油,翻炒两下,顶端放上香菜就可以出锅啦!(稍微有点遗憾家里没有白芝麻,不然撒上白芝麻,观赏性更强!)
技巧篇
下面分享一点制作过程中的实用小技巧:
o 火锅底料要小火煸炒才能把麻辣味激发出来
o 葱姜蒜切粗犷些,更能入味
o 蔬菜焯水之后一定要把水沥干!这样香锅才会干干的
o 因为使用火锅底料本身味很重,所以可以不用放盐,如果很重口的可以稍微加点
o 不喜欢吃花椒的可以的使用花椒油,这样不用吐花椒,还可以有麻麻的味道
o 记得翻炒的时候加上两勺白醋(如果没有白醋,黑醋也可以)辣中带点酸味真的超爽
至此大功告成!都说抓住男人的心要先抓住男人的胃,哈哈哈。不确定心抓住没有,但是男票的胃是妥妥地抓住啦!一不小心晚上又吃多了!实在是太下饭啦~~~希望大家都能够按照食谱徒手制作不同版本的麻辣香锅!笔芯~
