大家好,今天我要分享一道新年很适合用来招待客人的小点心:葡萄奶酥❤️ 它也是我儿时喜欢吃的小点心,完成的葡萄奶酥香味浓郁,很适宜当下午茶呢☕️
食材:
低筋面粉180g、葡萄干60g、奶粉12g、蛋黄3个(室温)、细砂糖50g、黄油80g

做法:
1.分蛋。将蛋黄和蛋清隔离,做奶酥我们只需要蛋黄,蛋清最后用来刷面团用。再说下蛋黄要用室温的

2.黄油放到容器中室温软化,但是千万不能软化成油水状,用手按压可以按出小洞就代表可以用

3.放入奶粉

4.再放细砂糖

5.用打蛋器搅拌均匀,打到膨松即可

4.分三次加入蛋黄,每一次都要混合均匀

5.第二次加蛋黄,继续搅拌

打到这个程度,完全混合均匀就可以做下一步

6.筛入低筋面粉,用刮刀翻拌,无论用哪种方法按压都可以,反正混合就行

7.容器底部有面粉,戴上手套揉几次面团,揉多几次慢慢混合,直到看不到有粉粒

8.揉好的面团表面光滑,摸起来滑滑的

9.倒入葡萄干

10.把葡萄干揉到面团里面

11.把揉好把面团放到揉面垫上

12.用擀面棍擀开,擀成厚约1cm的面片,四周不整齐的地方用刀切掉,修整不规整的地方可以让葡萄酥看起来漂亮点

13. 切小块,放烘培纸到烤盘中,排放好小块

14.给每个小面片刷上薄薄的蛋清

15. 预热烤箱,180度烤15分钟

烤完的葡萄奶酥非常酥口,黄油和奶粉赋予了奶酥非一般的口感,香香脆脆,味道跟曲奇🍪很像,口感像凤梨酥,再加上葡萄干,吃起来更是一道新风味,比起蔓越莓,葡萄🍇咬下去较甜,深的小朋友欢心^_^

小贴士:
我觉得这道甜品成品还是不错的,美中不足是卖相不是非常满意。所以我建议以下几点,大家做的时候可以改进下:
🌟葡萄可以切碎一点点,不需要切太碎。我烤好的奶酥里面的葡萄都爆开了,证明葡萄太大颗,真的有点影响美观
🌟剩下的蛋清可以做其他甜品,不要浪费三颗蛋清,例如可以做蛋白蛋糕、戚风蛋糕等
