作为不吃肉会死星人,每一顿饭都必须有肉,不吃肉少吃肉是不可能的,永远都不可能的~~可是有时候准备肉真的很麻烦啊~~
今天分享3道看一眼就会的豪华牛料理,让我们省点做饭时间肥宅快乐,也好过呆在油烟高的厨房当黄脸婆~~~

【香脆蒜片一口牛肉配蘑菇】

准备食材:牛排肉,大蒜,蘑菇
准备佐料:青葱,黄油(植物油也可以),黑胡椒粉,白胡椒粉,红甜椒粉(paprika,可不要),糖,盐

步骤:
1. 牛排肉切成2厘米立方体小颗粒,下盐、黑白胡椒粉、红甜椒粉(可忽略)、糖,挤少许柠檬汁,腌制半小时到1小时

2. 腌牛肉的过程可以给大蒜切薄片,我下面切的其实还是有点太厚了,煎的时候发现要煎更久才有脆脆的感觉
*如果有削薄片工具尽量用工具,蒜片越薄越好吃

3. 蘑菇依个人喜好切片,我没有切太薄

4. 开中小火,下黄油,黄油基本融化后下蒜片,转小火满煎,煎到两面金黄后盛起

5. 煎完蒜片的锅中继续煎蘑菇片,如果黄油不够了继续下,也是煎到蘑菇两面金黄、开始变软后盛起 *想蘑菇更入味的这时可以撒点盐和胡椒粉

6. 煎蘑菇的空档将葱白切小段,葱绿切成葱花

7. 还是那口锅,火力调到中大火档(如果牛肉粒想吃全熟用中小火),下黄油融化后下葱白爆香,放入牛肉粒,确保一面煎好已经闻到焦香味后再翻面,煎到个人喜好的熟度,我喜欢煎到焦褐色的状态

8. 全部煎好后摆盘,一口牛肉上撒葱花,开吃~

*更有bigger的摆法:拿一个大碟,中间放3粒牛肉,最多3片蒜片和蘑菇,确保食物占地面积不超过碟子的1/5

怀旧风味的鸡蛋牛肉卷

不知道为什么晒货的照片总是会变模糊
准备食材:牛肉末1磅(没用完),冬菇3个,木耳5片,洋葱1个,鸡蛋2个
准备佐料:白胡椒粉,葱姜蒜粉,糖,盐,料酒,蚝油,水淀粉
步骤:
1. 除鸡蛋外的所有食材切碎,加所有佐料搅拌均匀,想要更入味调好的肉馅可以在冰箱放3小时

2. 开一点水淀粉,搅拌均匀

3. 往水淀粉里打入两鸡蛋,搅拌均匀

3. 平底锅开中小火,下油,像煎千层蛋糕皮那样煎蛋皮
*油要够不然会粘锅,每次舀蛋糊都要确定蛋液跟水淀粉彻底混合

4. 2个大鸡蛋只煎了3张蛋皮,估计用3个鸡蛋能煎到4张蛋皮就能卷完牛肉馅了
蛋皮不烫手后可以开始铺肉馅,尽量压实,然后把肉卷卷起来

有一个卷放了玉米粒,事后证明玉米最好还是切碎了放,太容易掉了

5. 全部卷好后放蒸笼蒸5-10分钟

6. 蒸好后等到不烫手就可以拿出来切片开吃了~

【零失败红烧牛肉】
“真正好吃的牛肉,是要看起来坚挺,而吃起来柔嫩软榻,还要带着胶质,微微的沾唇才过瘾”,这个方子的牛肉做到了, 搭配面条完全不输台湾牛肉面哦~ 牛肉一定买牛腱肉,就能做出柔嫩软榻、微微沾唇的感觉~
准备食材:牛腱两条,洋葱1个

准备佐料:葱白,姜,蒜,豆瓣酱,酱油,糖,料酒,八角,胡椒粉
步骤:
1. 整条牛腱洗净入锅,加水、葱白2支、姜3片、料酒1汤匙,煮20分钟,牛肉必须冷水入锅,不用焯水,撇掉血沫就好

2. 大蒜10粒剥皮,洋葱随意切片

3. 小心烫手捞出牛腱,切厚片(血水表倒,倒回牛肉汤锅)

4. 炒锅烧热下油,放入大蒜,洋葱,2汤匙花椒,炒香

5. 洋葱软香后,加3汤匙豆瓣酱,1杯酱油,1汤匙糖,3汤匙料酒,中火拌炒1分钟(可加番茄一个)

6. 切好的牛腱及牛肉汤倒入炒锅,加2粒八角、少许胡椒粉

7. 煮滚后转小火慢煮1小时。关火盖好锅盖,等锅完全冷却(这个步骤不能急,一定要等冷却了)
8. 再加热时,试味道并下盐调味,浓郁的牛肉汤底就完成了
9. 在下好的面条(手擀面最好)放上2-3块牛腱,撒上葱花香菜,能香到邻居家哦~
