大家好,平时大家早餐都吃了些什么呢?如果有空余的早餐时间不如试试看这款舒芙蕾松饼,犹如云朵般的柔软,咬一口,漫步在云端哈哈哈~有点夸张了,不过这款舒芙蕾松饼确实吃起来非常柔软蓬松感,而且还入口即化~且做法简单易懂,有兴趣的宝宝,不妨试试看。

好了开始吧~

材料有:2颗鸡蛋、牛奶20克、酸奶10克、油10克、细砂糖20克、低筋面粉45克、几滴柠檬汁和香草精

首先先把蛋黄蛋白分离出来,倒入无水无油的容器中,备用~

接着在蛋黄中倒入10克的油,用手动搅拌器搅拌均匀~

接着加入牛奶和酸奶(这里我牛奶和酸奶已经混合在一起了),再用手动打蛋器搅拌均匀~

接着滴入几滴香草精调味一下,搅拌均匀~

最后筛入低筋面粉,搅拌均匀后,蛋黄糊就完成啦!

做好的蛋黄糊,是不是很简单~备用ing
接着打发蛋白霜

这款舒芙蕾松饼所需的蛋白打发度中性发泡就可以了,把细砂糖分两次加入蛋白霜中。

蛋白打发到体积膨胀两倍左右时加入几滴柠檬汁,帮助稳定蛋白霜,继续以低速打发~

蛋白霜打发到粗泡加入第一次的细砂糖,继续以低速打发~

蛋白打发到湿性发泡时,加入剩余的细砂糖,继续以低速打发~

打发到蛋白提起出现大弯钩,就是中性发泡了,不需再打发了~

接着舀一半的蛋白霜到蛋黄糊中,用切拌结合翻拌的手法进行混合~

蛋黄糊混匀后,倒入剩余的蛋白霜中,继续以切拌结合翻拌的手法进行混合,记住不要太大力,这样会使蛋白霜消泡哦~这样做出来的舒芙蕾松饼就不蓬松柔软啦!

做好的舒芙蕾蛋糕糊比一般的蛋糕糊更浓稠一些,质地蓬松柔软~

接着把蛋糊装进裱花袋中(没有裱花袋的宝宝,也没有关系,待会直接用勺子舀),准备小型的模具,没有模具也没有关系,直接舀一勺蛋糊在不粘锅中,尽量弄圆形一点,看起来会好看一点。

不粘锅中刷入少许的油,全程火保持中小火,把蛋糊挤在模具中,大概7分满左右,它在煎蒸中会膨胀起来~

大概煎了一分钟左右松饼已经开始慢慢膨胀起来了~

这时倒入一点点的水,接着把锅盖盖住焖大概1-2分钟左右~

接着翻面,再加入一点点水,盖上锅盖再焖2分钟左右就完成啦!

起锅后从模具中脱离出来,点缀上自己喜欢的水果和奶油或者冰淇淋球都可以,你的味蕾,你做主~

其实这款舒芙蕾松饼跟戚风蛋糕做法一样,这款松饼是用半煎半蒸的方式,如果做戚风蛋糕掌控不了烤箱温度的宝宝,这款松饼蛋糕是不错的选择,方便快速,且口感更胜戚风蛋糕~
