我是北方人喜欢吃饺子,平时包饺子时通常喜欢在猪肉馅里加些鲜虾泥。虾肉含胶质,容易和馅,吃起来味道也鲜美!唯一不足就是每次把大虾仁切碎后口感没有吃整只虾那么过瘾。所以今天我就换个包法,把整只虾都包进去,把虾饺煎至酥脆后,再撒上一层蛋液,出锅时蛋液会把虾饺抱住,色香味俱全!

圆白菜半颗
去骨鸡腿肉300克
香葱1-2根
鲜虾300克
面粉300克
鸡蛋2个
料酒1匙、蚝油2匙、香油2匙、酱油1匙,糖1/3匙(提鲜)白胡椒1/3匙
做法
1. 新鲜开背虾肉洗净,然后用刀逐一切深一些,从前切到尾,再把虾肉两边摊开,像琵琶型。

2. 把面粉和常温水和匀,揉成面团。

3.圆白菜切碎,鸡腿肉剁碎,香葱切末。然后逐一倒入大碗,加入料酒,蚝油、酱油,白糖、香油、鸡蛋和少许盐调味,搅拌均匀。

4. 在饺子皮中间放少量长形的馅料,然后把鲜虾平铺在馅上面,把中间包好,露出两头。注意虾尾要落出来不去壳。

5. 热锅加少许油,把虾饺摆放入锅,中大火煎1分钟,然后加100克的水,转成中小火慢慢煎至两面金黄色,没有汁液为止。

6. 最后取两个鸡蛋打散,加少许盐,用漏勺均匀地散在虾饺上面。盖上锅盖待蛋液凝固了,即可整盘取出摆盘享用!✅

饺子皮酥、蛋皮香嫩、虾肉弹、圆白菜加上鸡腿肉的韧劲儿,吸收了虾仁的鲜汁,口感真是无敌好。一定要趁热吃,一口接一口,简直不要太好吃!
