前言
估计很多麻麻跟我一样都有一个困恼就是家中的孩纸不爱吃蔬菜,那怎么办呢?今年给麻麻们分享一款用胡萝卜做出可爱又美味的小纸杯蛋糕或者用菠菜也能做出美味又营养的瑞士卷,孩子们吃得开心,麻麻们也放心啦!

小纸杯外面的粉色蕾丝边是在amazon上买的,很早以前有推荐过,amazon上有很多款式可选,非常适合小party上为纸杯蛋糕增添色彩~
第一款:胡萝卜小纸杯蛋糕

这款胡萝卜小纸杯蛋糕吃起来非常绵密细腻,吃起来感觉不到任何胡萝卜的味道,非常推荐给家中不爱吃胡萝卜的宝宝们~

🌿材料有:鸡蛋3颗、细砂糖45克、玉米油30克、低筋面粉45克、玉米淀粉15克、胡萝卜汁50克、几滴柠檬汁和香草精~

首先先把鸡蛋的蛋白和蛋黄分离出来备用~蛋黄中倒入玉米油搅拌至完全吸收~

接着100克的胡萝卜切片放入料理机中加入25克的清水搅拌成细腻的胡萝卜泥,接着把胡萝卜泥过筛成胡萝卜汁,称出50克的胡萝卜汁,倒入蛋黄糊中,搅拌至完全吸收~

接着过筛加入15克的玉米淀粉和45克的低筋面粉,搅拌至没有面粉颗粒为止~

接着滴入几滴香草精,大概1茶匙的量,一起搅拌均匀后蛋黄糊就完成啦!放置一旁备用~

接着打发蛋白霜,细砂糖分三次加入蛋白霜中打发至中性发泡~
🌿温馨提示:烤箱开始预热315华氏度20分钟左右

蛋白打发至体积变大两倍,滴入几滴柠檬汁帮助稳定蛋白霜,继续以低速打发~

蛋白打发至粗泡倒入第一次的细砂糖,继续以低速打发~

蛋白打发至表面开始出现纹路,倒入第二次的细砂糖,继续以低速打发~

蛋白打发至提起打蛋器出现大弯勾,就是湿性发泡,倒入剩余的细砂糖继续打发~

蛋白打发至出现尖角,差不多是中干性发泡,不需要再打发了~

接着舀1/3的蛋白霜跟蛋黄糊以切拌结合翻拌手法进行混匀~

第一次混匀后,倒入剩余的蛋白霜中,继续以切拌结合翻拌的方式进行彻底混匀~

彻底混匀的胡萝卜蛋糕糊质地非常细腻光滑~

接着把之前已经放入小纸杯的烤盘拿出来~

用勺子舀蛋糕糊装入纸杯7分满左右,震几下送入烤箱320华氏度,小号纸杯蛋糕烤20分钟左右~大号纸杯的蛋糕需要多烤5分钟左右~

烤好的纸杯蛋糕出炉后,震几下放在烤架上放凉备用~

接着大纸杯🧁蛋糕也烤好了,震几下稍微放凉就可以食用啦!我这次就不打算装饰啦!因为懒癌发作了哈哈哈
第二道:菠菜瑞士卷

菠菜瑞士卷或者胡萝卜也可以做成瑞士卷,做法跟配方跟菠菜一样~

🌿配方有:鸡蛋4颗、细砂糖45克、低筋面粉65克、玉米油35克、菠菜汁55克、几滴香草精和柠檬汁~

接着55克的菠菜放入料理机中加入15克左右的清水,搅拌至细腻的菠菜泥,接着过筛出55的克菠菜汁。

接着在菠菜汁中加入35克的玉米油,搅拌至完全吸收,接着倒入10克的细砂糖搅拌至无细砂糖颗粒为止,接着加入4颗蛋黄,一起搅拌至完全吸收。然后过筛加入65克低筋面粉,搅拌至无面粉颗粒为止~

最后滴入几滴香草精搅匀后,菠菜蛋黄糊就完成啦!放置一旁备用~

接着打发蛋白霜,蛋白打发体积变大两倍后滴入几滴柠檬汁帮助稳定蛋白霜,继续以低速打发至粗泡倒入一半的细砂糖,继续以低速打发,打发至表面出现纹路倒入剩余的细砂糖,继续以低速打翻至提起打蛋器出现大弯勾,就是湿性发泡啦!做瑞士卷蛋白打发至湿性发泡就可以啦!

接着舀1/3的蛋白跟菠菜蛋黄糊以切拌结合翻拌手法进行混匀,混匀后倒入剩余的蛋白霜中,继续以切拌结合翻拌手法进行彻底搅拌均匀,接着倒入垫了烘培纸的9inx12in的烤盘中,震几下送入烤箱320华氏度烤25分钟左右~

烤好的蛋糕出炉后震几下,放在烤盘上把蛋糕片移出来,撕开四边的烘培纸,稍微放凉一点就可以开始卷蛋糕卷了~

蛋糕卷一定要趁着还有温度来卷,这样卷出来的蛋糕卷不容易开裂~切掉四边不整齐的边,接着把蛋糕片卷起来~卷好的蛋糕用烘培纸包裹起来,放入冰箱冷藏半个小时以上再来拿出来切片~

半个小时后,把蛋糕卷平均切成5片,就可以享用这道健康又美味的菠菜瑞士卷啦!
