辣子鸡这道菜我经常在餐馆吃,自己试着做过两次,都不是很成功。这道菜需要炸香鸡肉,而家庭小灶炸起来很是麻烦,火力也不够,又特别费油。今天我尝试了用空气炸锅做,没想到竟然成功啦!最后的成品香酥极了,我和老公两个人吃了一整只…
下面跟大家说说我的做法。这道菜还是有点儿麻烦的,适合周末无聊在家做哈,做好了就着啤酒看点儿剧,当零食嗑也是很爽哒。

主要材料:
小黄鸡一只
葱姜蒜
干红辣椒半碗(个人喜欢重庆的辣椒,辣味够)
青花椒小半碗

1. 剁鸡肉。
鸡肉洗净,肚子里的血和内脏一定要处理干净。用大砍刀剁成小块,手无剁鸡之力的小伙伴可以选用鸡翅,剁起来比较容易。

2. 腌鸡肉。
1/2 teaspoon盐
1 tablespoon料酒

3. 炸鸡肉。
我的鸡肉多,锅小,分开炸了两锅才完成。

炸的过程中隔五分钟左右打开搅一搅。

4. 炒鸡肉。

酱油根据自己用鸡肉的量添加,比平时炒菜多一点也可以。

5. 复炸一遍。
炒好的鸡肉味道已经不错了,但是还不够脆和干,没有辣子鸡那种干煸的感觉。洗干净空气炸锅,我们要把鸡再放进去炸一遍,煸去鸡肉的水分。

总结:
这道菜其实没啥技术含量,个人觉得需要注意的首先是鸡肉剁小块一些,这样比较容易熟和入味。再就是炒辣椒花椒一定要小火,防止辣椒变黑。根据个人口味,可以在炒制过程中适当加盐或者其他调料调味。这道菜用的油比较少,比较健康,怎么吃都不会油腻噢,味儿也很足,如果有熟白芝麻撒一点儿炸肯定更香。
