上层是水晶焦糖冻,中层是鸡蛋布丁🍮,底层是软绵绵的蛋糕,布丁+蛋糕吃起来口感太爽了……
以下的配方适用于7寸/8寸的固定蛋糕模具。
制作材料
焦糖层
黑糖(brown sugar) 10克
细砂糖 25克
冷水 8克
热水 65克
吉利丁片 3片 (总约7-8克)
布丁层
细砂糖 60克
牛奶 150克
常温水 100克
淡奶油 100克
朗姆酒 10克
鸡蛋 5个(large size)或4个(Jumbo size)
蛋糕层
牛奶 35克
玉米油 25克
低筋面粉 20克
细砂糖 30克
鸡蛋 2个(large size)
柠檬精油/柠檬汁 几滴
制作步骤

黑糖+细砂糖+8克冷水放入小锅里

中小火加热至沸腾后再加入65克的热水继续再煮至沸腾

继续再煮至糖完全融化

吉利丁片用冷水浸泡至软化,然后挤干水

放入到沸腾的焦糖里,搅拌至完全融化

然后倒入固底模具里,面上的泡泡可以用纸巾轻轻擦拭干净,放入冰箱冷藏半个小时 P.S 记得是固底模具,不要用活底模具哦……

4个特大号全鸡蛋或者5个普通大小的全鸡蛋+150克牛奶+100克常温水+100淡奶油+60克细砂糖

混合搅拌均匀

再加入10克朗姆酒混合搅拌均匀

搅拌好的布丁糊过筛两次

最后再过筛一次到刚才已装有焦糖层的模具中

2个蛋黄+35克牛奶+25克玉米油

混合搅拌均匀

筛入低筋面粉,翻拌均匀

接着打发蛋白,加入几滴柠檬汁/柠檬精油,糖分3次加入,至打发至9成硬身即可

先把一般的蛋白加入蛋黄糊里翻拌均匀

再把面糊倒回剩下的蛋白里混合翻拌均匀

轻轻把蛋糕面糊倒在布丁糊的上面,放入大烤盘上,注入大约1cm高度的热水,热水约80摄氏度左右

烤箱提前预热至300华氏度(150摄氏度),把蛋糕放进烤箱,先是300华氏度(150摄氏度)烤50-60分钟,再转250华氏度(120摄氏度)烤30-40分钟,烤完后让它呆在烤箱里焖1个小时,拿出来凉后,放入冰箱冷藏至少4-6个小时后方可享用.......

冷藏好后,用热毛巾敷在蛋糕模底30秒,然后把蛋糕翻过来晃一晃,就可以完美脱模了......
