上次做的大肘子吃完意犹未尽,队友也表示没有吃够,于是今天刚好有时间就又做了一次,把过程也详细写下来了,包你一看就会哦!✌️
准备工作
提前先泡上黄豆
顺便煮上三个鸡蛋

八角桂皮葱姜蒜

生抽老抽料酒蚝油:比例分别是2:1:1:1

开始炖啦!
第一步先把肘子焯水,加一勺料酒,可以去除腥味!

里面的脏东西慢慢都出来了,记得翻个,两面都可以焯一下。

焯好之后洗净肘子,用刀刮去杂毛,晾水、用厨房纸擦干备用。

锅内下油放入冰糖,中火使其融化至枣红色

开始给肘子炒糖色,这一个步骤一定要特别小心,不要崩到自己,或是可以像我一样直接把盖子盖上,两面翻面上糖色,

把肘子和糖水一起转入砂锅,把所有调料和大料一起倒入砂锅,往砂锅里加水,没过肘子,这时可以尝尝味道,不够味道的可以加入一些盐调味。
大火烧开,水煮沸之后转小火,炖一个半至两个小时,中间记得给肘子翻个,如果是高压锅的话,一般40分钟就够了,中间可加入提前泡好的黄豆和煮好的鸡蛋🥚!
