念叨了好几天的椒盐虾今天终于做了。把整只虾放在嘴子咂一下,又香又辣,香的让人连手指都想舔干净。Maya和大家分享最近很喜欢吃的两道菜——香辣椒盐大虾和茶香排骨。椒盐虾是一道普通又让人吃过就忘不了的一道菜。
香辣椒盐大虾

食材
冷冻大白虾6-10只、小米辣4-6个、蒜末、小葱2根、白胡椒、黑胡椒、五香粉各1匙(15ml)花生油、料酒、面粉50克、白糖、盐

做法
1. 大白虾洗净、用剪刀开背去虾线剪去虾须,加2匙料酒腌制10分钟去腥气。然后下热水汆烫一下捞出沥干水份。

2.沥干水分后倒入面粉,保证大虾均匀沾满面粉

3. 热锅加油,(平底锅需加半锅油的量,没过一半虾身)烧热后倒入大虾,两面煎到酥脆感,取出备用。

3. 小米辣、蒜和葱切成末。另起一锅,倒入少许炸虾的油,放入白胡椒、黑胡椒、五香粉和盐,充分搅拌,加入小米辣、蒜末和葱末炒香。最后倒入炸好的大虾,翻炒均匀,就可以享用了!

这道椒盐虾,又辣又酥脆,吃着真的很过瘾。喜欢椒盐虾的小伙伴们赶紧做起来!
茶香排骨
茶香排骨是云南菜,一般以喝剩的普洱或滇红为底,色深味浓,更容易给排骨上色。我今天用的是新鲜冲泡的绿茶做汤底,炖出的排骨色泽更加清亮,味道也多了一层绿茶的清香味。材料简单,非常容易做的一道菜。

排骨、绿茶、生抽、老抽
油、糖、蒜、盐
做法
1. 取一些绿茶,温水冲泡,放在一边备用

2. 排骨切小块热水汆烫一下去血水备用。烧热锅,加油和砂糖,下排骨炒上色。

3. 加入生抽和老抽各2匙,然后倒入绿茶水,盖好锅盖,大火烧开后转小火炖45分钟。喜欢酥烂的再加20分钟。

4. 将滤网过滤下来的茶叶入油锅炒酥,小火,火太大会糊掉。

5.根据个人口味加入适量的盐,大火收稠汤汁后,把排骨盛出来,在上面撒上茶叶酥,就可以享用了!
