写在前面
最近好馋鸭脖呀,外面卖的不太敢吃,毕竟不知道人家里面放了啥,于是上周末我们就研究了下食谱自己做了,买了三磅的鸭脖,第一次做,先试验一下,我们用了1.5磅!把食谱分享出来,也是为了我自己方便回来查看😄不用再上网搜嘿嘿
材料准备
首先要浸泡鸭脖几个小时去血水,之后再进行清理,不理不知道,原来鸭脖表面这么脏,又好多一层一层肥油一样的东西,还有一层一层的膜,肥油都取掉了,薄膜比较难去,所以就剩了一些没有去掉,应该不会影响口感吧,第一次做,就当实验品啦!
清洗完的鸭脖如下图👇

材料:生姜大蒜八角桂皮豆瓣酱生抽料酒火锅底料花椒👇

做法
首先,把鸭脖切成段状
下冷水焯,加入料酒和生姜
看,多脏,一定要撇去上面的血沫多焯几分钟

焯好之后用冷水洗净

中火起锅热油,加入姜蒜豆瓣酱翻炒,倒入鸭脖一起翻炒使之均匀上色,加入两勺料酒两勺生抽,继续翻炒,倒入之前准备好的大料翻炒,炒出大料的香味之后,加入少许的火锅底料(火锅底料因人而异,我是想增加一点鸭脖的麻味,所以加的,不喜欢的朋友可以略过)
倒入开水,没过鸭脖,开煮。大火煮十分钟煮开之后之后转小火,煮四十分钟左右就差不多了!
中途要时不时的给鸭脖翻面,使之更好的入味哈!
最后剩少许汤汁的时候调味,加入适量盐,大火收汁十分钟,关火让鸭脖焖一会儿,入味之后口感更佳哟!

写在最后
口感还是相当不错的哈哈,有点偏辣,其实我也不知道火锅底料加的是成功还是败笔😂😂已经吃不太出来了,另外1.5磅再做的时候决定不用火锅底料试试,看看哪种口感更好一些!
自己在家做的吃着放心也过瘾,其实很简单呢,慢慢做多了之后发现原来所有卤的食物都万变不离其宗就是那几个步骤,只是把食材换了而已😄并没有想象的那么复杂!
