自从学会了戚风蛋糕,感觉跟任何风格的蛋糕都可以做了,昨晚做的肉松蛋糕卷得到家人一致好评,让我非常想要尝试抹茶蛋糕卷,做蛋糕配方表还是一样的,会有稍稍的不同
准备材料~
材料: 鸡蛋5颗(这次我用的是鸭蛋)低筋面粉90克,白砂糖70克,橄榄油:55克,牛奶:70克,抹茶粉:10克,
奶油配方:淡奶油:100克,白砂糖适量 ,马斯卡彭芝士:70克

制作过程~
Step1: 蛋黄和蛋白分离放入无油无水的容器里,在蛋黄里加少许的白糖帮忙打散

Step2: 边搅拌蛋黄,边慢慢倒入橄榄油,直到把所有的橄榄油都用完,在以同样的方式,边搅拌边慢慢倒入牛奶,搅拌均匀

Step3: 把低筋面粉和抹茶粉过筛加入蛋黄糊里,(面粉和抹茶粉一定必须要过筛),然后用打蛋器,把它们都搅拌均匀,使用“Z”字型的手法来回的搅拌蛋黄糊,完全混合后,放一旁待用

Step4: 这里把刚刚准备好的蛋清拿过来,挤入几滴柠檬汁,用电动打蛋器按低速打发蛋白,这里白糖分三次来加,当蛋清打发到很多泡沫的时候就可以加入一些白糖,在继续打发打蛋清变的很细腻,白白的,就可以在加入一半的白糖,继续打发,直到蛋清有明显的纹路就可以吧剩余的白糖加入进去。直到拿起电动打蛋器时,会有一个勾出来,那就算打发完成了 (如果发现,蛋白打了很久还是比较水,有可能是装蛋清的容器里有水,那就打发不了蛋白了,只好重新来过)

Step5: 把打好的蛋白拿一勺放在蛋黄糊里,按翻拌的手法,把蛋白和蛋黄混合均匀

Step6: 把刚刚混合好的蛋黄糊加入剩余的蛋白糊里,按同样的方式,翻拌手法搅拌均匀(此时,就可以预热烤箱到325度)

Step7: 等搅拌均匀后,把面糊倒入准备好的盘子里,拿高一点倒下来,可以让面糊里的大气泡破掉,在铺满整个盘子,在震几下盘子让面糊里的气泡减少,同样在用牙签划上几次,来减少气泡,在放入烤箱325度烤20-25分钟

Step8: 烤好后的蛋糕,在桌子上震几下来散蛋糕里的热气,就可以倒扣放凉了。就可以来准备奶油了

Step9: 把马斯卡彭芝士软化后,拿出来加入几滴柠檬汁,搅拌均匀就可以准备打发淡奶油

Step 10: 淡奶油不需要提前拿出来,准备弄的时候拿出来保持冰冷的温度可以帮助淡奶油成功打发,打发的同时加入白砂糖(这里白砂糖的分量取决于个人对奶油甜度的喜好)打发后的奶油,只要有明显的纹路和奶油定型了,不流动就可以直接加入刚刚准备好的马斯卡彭芝士,把两者完全搅拌均匀

Step11: 把蛋糕的四周的边切掉,这样等会卷的时候不容易裂掉,在抹上奶油,同样个人喜好,喜欢多奶油的就多抹点,然后把蛋糕慢慢的卷起来。把两边扎起来,放入冰箱冷藏1-3小时后,在进行切块
