前言
我平常特别喜欢吃蛋黄酥,觉得这世界上怎么有这么好吃的美食。😋😋但是无奈外面的蛋黄酥热量糖分非常高不说😯而且添加剂很多。所以经过多次试验,做出了今天要给大家分享的低卡低糖紫薯蛋黄酥❤️(相对于市售的蛋黄酥)一起来看方子吧。
材料
油皮部分:
中筋面粉 100g
玉米油35g
沸水90度 55g
盐 2g
糖20g
油酥部分:
中筋面粉 100g
玉米油 50g
馅料
咸蛋黄 5颗 (我每个蛋黄酥放半个蛋黄,喜欢放入一整个的需要10颗)
紫薯泥 (做法和我写的红豆沙一样,糖分可以减到红豆沙的1/3,因为紫薯本身又甜味)
麻薯
糯米粉65g
玉米淀粉12g
糖20g
牛奶140g (可用清水)
椰子油10g(不喜欢的可以用黄油)

油皮部分材料加入厨师机高速搅拌,搅拌出膜即可,手揉也可以哦,就是比较累〒_〒

揉好后保鲜膜包好,这部很重要!防止干裂。

油酥部分搅拌好保鲜膜包好,两者放置冰箱松弛。

蛋黄用白酒泡一下后放置烤箱烤5分钟385度

麻薯材料全部混合至无粉末,盖一个保鲜膜并且戳几个小洞蒸20分钟,面糊没有液体则表示则表示蒸好了。

一层层叠起包好,看上去好有食欲呀。

最后涂上蛋黄液和芝麻。烤箱350度烤30分钟。

结语
为了让热量更低一点,这个方子做出来的蛋黄酥肯定没有猪油黄油做出来的香。所以不介意的吃货们可以把油进行更换。我个人其实不太喜欢猪油做出来的味道,有股腥味。黄油的没有尝试过,估计特别的香~😊
