油皮(16个量)
中粉(普通面粉) 200g
黄油 70g
糖 20g
水 82g
油酥
低粉(可中粉替代) 140g
黄油 68g
馅
红豆沙 适量
咸蛋黄 16个
其他
蛋黄(刷表面) 一个
芝麻 适量
1) 把所有的油皮材料倒入面包机,启动程序,面包机开着盖子大约揉25分钟.
2)面包机在揉油皮的的时候,我们可以来准备油酥,把低筋面粉和室温软化过的黄油揉在一起,捏成团,盖上保鲜膜备用.

3)把油皮分成16份,盖上保鲜膜松弛15分钟
4)油酥也等量分成16份,盖上保鲜膜备用
5)把每份用油皮都包住油酥

6)把包好的团子,封口在上压扁,然后用擀面杖擀成牛舌状,从上往下卷起来.

7)趁着第一次擀卷松弛的时间,准备红豆沙和咸蛋黄.把准备好的蛋黄包入红豆沙中,放入冰箱冷藏.

8)松弛好的面团,从中间开始往上往下个一次,不要回头擀.
9)擀平以后再从上往下卷起来,再松弛15分钟.
10)把松弛好的油酥皮,从中间用大拇指压一下再两头捏在一起.

11)用擀面杖擀圆
12)把蛋黄红豆沙包进去 捏紧
13)烤箱预热到350F
14)在蛋黄酥表面先刷一层蛋黄,烤5分钟后,拿出来再刷一层蛋黄水,撒上芝麻放入烤箱烤35分钟(看自家烤箱脾气)然后在烤箱里再闷10分钟.
