以前我做过水浴法就是盘子太浅了,水放的不够多,然后导致体质开关开关的蛋糕也是不熟,出来形状更是不要说了!这次再次挑战水浴!成功了!真的太有成就感了!
材料:
鸡蛋 8个玉米油 80克牛奶 120克盐 1克低筋面粉 90克细砂糖 90克玉米淀粉 15克

辅助材料:
温度计

烤箱:305F 60-75分钟(主要看你蛋糕和烤箱的脾气)
做法:
1⃣️ 先用锡纸包好我们的模,至少要3层,再来按照你的模大小弄好牛油纸!备用
2⃣️ 过筛好面粉备用,再来煮油到80C或者 170F 不能过热或者低于这个温度要不然做出来的蛋糕会不好看

3⃣️ 加入面粉 搅拌均匀再加入牛奶搅拌一下就OK

4⃣️ 蛋黄蛋清分离,把蛋黄加入到面糊里面搅拌均匀就好

5⃣️ 把盐加入到蛋清里面,高速打发粗泡泡

6⃣️ 加入一半的糖打发到细致小粗泡

7⃣️ 把剩余的糖和玉米淀粉全部倒入 打发到湿性发泡到硬性发泡就可以,就是一个勾勾不会掉落就可以了!

9⃣️ 用3/1的蛋白加入到蛋黄糊里面,用翻拌手法弄均匀,好了之后全部倒入蛋白翻拌均匀就好了!

🔟 倒入进烤箱的时候放入大概2cm的热水做水浴法!

1⃣️1⃣️ 膨胀起来一定的高度,表面也是金黄色就可以了,大概60-70分钟,主要还是看你烤箱脾气!

超细致的口感!而且不干!这种水浴法我爱上了!如果中间加入芝士的话口感会更好!咸咸甜甜的!下次可以挑战一下!
