酥皮泡芙 ,在我心里有着特殊的位置,小时候趴在北京友谊商店门前的甜品店的橱窗外,看着里面形形色色的甜品,诱人至极,特别是那撒满糖粉的酥皮泡芙,节庆期间还会被装扮成可爱的大熊猫、小青蛙和圣诞老人,附近驻华使馆金发碧眼的外国人会过来买上一打,捧着回家,好不羡慕。

直到有一天,爸爸下班回家,递给我一个白色的大盒子,叮嘱我小心捧着,放在桌上,等妈妈回来的时候,打开来看,竟然是一打酥皮泡芙,爸爸说他永远都忘不了我口水横流,眼睛发光的馋猫儿样儿。

关于泡芙起源的故事有很多不同的版本,各个国家似乎都想给这个迷人的小家伙和自己的国家扯上点儿关系。意大利人说是佛罗伦萨名门美第奇家族的凯瑟琳远嫁法国时,随行的甜点师发明的;法国人说是一对法国夫妇抵抗门当户对婚姻理念的产物,颇有几分浪漫的色彩。据说当时法国有一个很有权势的农场主的女儿爱上了出身平民的放牧的小伙子,农场主为了阻止这段姻缘,给小伙子出了个难题,就是让他在三天之内把牛奶装到鸡蛋里面去,于是小伙子就在甜品店里做出了第一个泡芙,外壳酥脆,内馅醇厚,牛奶藏在鸡蛋里,完成了挑战,后来法国人结婚的宴席上都一定要有泡芙呢。

之前总会去Beard Papa贝尔多爸爸泡芙工坊去买他家的大泡芙,抹茶口味和原味的两种,我都很喜欢,那个时候小朋友就能捧着吃掉一整个,然后满脸奶油地咧着嘴,咯咯咯笑个不停。2020年的大环境很不友好,大部分时间都窝在家里,于是我只好自己尝试做泡芙,给家里人解解馋啦。
那我们就开始吧。

先把80g低筋面粉过筛,3个常温的鸡蛋打散备用。

锅里放入50g黄油、65g牛奶、65g水、2g盐和2g糖, 中小火煮沸后,加入过筛后的低筋面粉,迅速搅拌到没有干粉为止, 关火。

等一分钟左右,让面团的温度稍微降低一点儿, 分四次加入蛋液,每次都要搅拌到完全混合均匀再加下一次, 这个过程有点儿累,但非常值得。

最后提起刮刀,面糊能慢慢坠落, 呈现倒三角的状态,就可以了。

用裱花嘴在烘焙纸上挤出可爱的样子, 用沾水的小勺子轻轻把泡芙顶上的那个尖儿按平, 放入预热到360F的烤箱里,烤25分钟, 中间千万不要打开烤箱,泡芙会因为温度的突然降低而迅速回缩。 我烤到20分钟的时候,把烤箱灯打开, 看着烤箱里已经圆鼓鼓的泡芙慢慢上色,真的是太治愈了。

等到泡芙完全凉了,就可以往里面挤内馅了,比较常见的是奶油、巧克力、冰激凌等等, 喜欢抹茶口味或者巧克力口味的在制作奶油的过程中加入自己喜欢的抹茶粉或者可可粉就可以了。

我这里是原味的奶油,200g heavy cream加上20g糖中低速打发, 我不想浪费裱花袋或者保鲜袋,直接用小朋友吃药用的针管, 把淡奶油从泡芙的底部挤进去。

完成后再撒上一层糖粉,外壳酥脆、 内馅醇厚的酥皮小泡芙就完成啦!

顺便再奉送个百搭卡仕达酱的做法吧,把卡仕达奶油填充到泡芙里面做内馅,也超级好吃呢!

先把2个蛋黄用蛋抽打散,加入20g砂糖,搅拌到淡黄色后加入18g玉米淀粉或者低筋面粉混合搅拌均匀,我这里用的是低筋面粉,因为想要更加浓郁的口感。

200g牛奶小火加热到出现小泡泡,少量多次地加入到蛋黄糊里面,慢慢加,防止蛋黄变成蛋花,然后把牛奶蛋黄的混合物放回锅里,小火加热,不断搅拌,搅着搅着就会觉得蛋抽的阻力变大,面糊开始变得浓稠。

当出现明显纹路的时候关火,把保鲜膜紧紧地贴在卡仕达酱的表面,放入冰箱冷藏室,使用期限大概在三天左右,毕竟是蛋奶的混合产物。冷藏后的卡仕达酱拿出来后,用打蛋器或者蛋抽搅拌顺滑,口感会更好。如果你还有消耗淡奶油的需求,那就先把奶油打发,然后加入到卡仕达酱里,就会得到一碗奶香浓郁的卡仕达奶油,也是很好的泡芙内馅的选择。

制作泡芙要有点儿计划,准备吃多少就挤多少内馅,不要眼大肚子小的贪多,吃不掉的没有放内馅的泡芙可以放进冰箱冷冻保存, 想吃的时候直接放入烤箱,360F烤5分钟就又得到表皮酥香的泡芙外皮啦,然后再挤上内馅就瞬间好吃如初啦。
