芝麻山药条
超市里面的山药一般都价格不菲,不知道为什么宅家季这段时间反而便宜了下来,估计和其他essential的食材相比,需求量下来了吧,供需平衡。宅家这段时间,特别喜欢吃零食,桌子上常年堆放着的各种大大小小的零食,无论健康与否,在这段日子都消耗得特别快。先来分享一道一道长辈小朋友都喜欢的健康小零食,空气炸锅版芝麻山药条,吃起来外脆里糯,黑芝麻的香味也很浓,营养价值高,还很有饱腹感呢。

所有用到空气炸锅的美食几乎做起来都非常简单,先把山药削皮切成条,大小胖瘦可参考薯条,然后在每根山药上都裹上黑芝麻,白芝麻当然也可以,只不过视觉冲击没那么强罢了。

把裹好芝麻的山药条放入空气炸锅,330F,烤15-20分钟,中间拿出来轻轻地颠一下空气炸锅,或者用筷子帮山药条翻个身,保证所有面儿都受热均匀。

炸好的山药条脆香满满,直接拿出来吃就可以了。当然,如果你追求最好味道的话,我建议你可以试试撒一点儿白糖和枸杞子,不喜勿喷,白糖没那么健康,但好吃啊,偶尔吃点儿糖也没有那么罪不可赦嘛。

炸花生米 & 霜糖花生米
之前因为要做快手重庆小面,需要炸熟的花生米,又实在是没有时间用传统的盐炒花生的方法守在灶台边扒拉,于是想到了空气炸锅,这家伙简直太方便了!从那以后,我每次炸花生米,都改用空气炸锅了。

花生洗净,沥干水分,放入空气炸锅中,360F,10分钟,轻轻用手一碰,花生米的红色外衣就碎了,一边碾着花生往嘴里扔,一边喝着京啤,仿佛一下子就回到了簋街上,好像下一秒钟麻小就要端上桌了似的。

花生泡在温水里10分钟,洗净后加入1个鸡蛋和淀粉,搅拌均匀,让每一颗花生米上都裹上淀粉,放入空气炸锅360F,10分钟,炸到花生酥脆为止。空气炸锅的另一个好处就是能够避免掌握不好油温导致的炸糊或者炸过。

平底锅里放入糖和一碗水,大概在100g糖配50ml水这个比例吧,搅匀,烧开后转小火,锅里会出现很多小气泡,慢慢的开始变颜色且出现大气泡,这个时候就可以开始挂霜了,加入炸过的花生米,快速翻炒,然后关火。接着加入芝麻和30g玉米淀粉,翻炒均匀,因为平底锅的温度开始慢慢降低,糖也逐渐凝固,颜色也变成白色,你需要做的就是不停地翻炒,完成挂霜的过程。

颗粒分明的挂霜花生香甜酥脆,是非常好吃的手指小食,小时候我就特别喜欢吃,抓一把一会儿工夫就消灭掉了,长大了之后很少吃到,但吃起来还是控制不住自己呢。

炸鸡翅
炸鸡翅大概是我家小朋友吃得最津津有味的美味了,每次我说要做炸鸡翅,她都会奶声奶气地叫,Thank you Mommy!谁叫我就吃这一套呢,心甘情愿为她做美味!

言归正传,接着来推荐这道快手好吃的空气炸锅版炸鸡翅,先把鸡翅洗干净,沥干水分,用叉子或者牙签戳几下, 用料酒、生抽、盐、糖腌制一小时左右。先裹上一层面粉,再来一层蛋液,最后再裹上面包糠,面粉也可以用玉米淀粉和面粉以1:2的比例调的粉代替。

之后就可以放入空气炸锅里了,380F烤10分钟,翻面再烤5-8分钟。配上一碟Trader Joe’s的泰式甜辣酱,咬上一口,外酥里嫩,超级好吃。给小朋友吃之前,记得掰开凉一下,鸡翅里面很烫的,小朋友心急咬一大口,要小心不要烫到嘴巴。

台湾盐酥鸡
接着分享的这款台湾盐酥鸡,其实是有一次分享给一个小伙伴,人家跟我要去了菜谱,还给我配图交作业,结果让我家先生看到了,这个眼馋啊,念叨了整整一个星期了,后来周末腾出工夫总算让这家伙吃上了。星期五的晚上就把鸡腿拿出来解冻,说剔骨的工作他也负责了,只为从小就爱吃的盐酥鸡!

鸡腿一包,去骨去皮切块,加入蚝油、香油、糖、米酒或料酒、生抽、蒜蓉、五香粉、盐、鸡蛋和清水搅拌,腌制一到两个小时。

在鸡肉块表面裹上一层地瓜淀粉或者面包屑,放入空气中炸锅, 喷一层油,360F,10分钟,翻个面儿,再喷一层油,8分钟, 出锅,撒上一层辣椒粉、五香粉和罗勒叶,好吃到吸吮手指。

孜然鸡脆骨
十一月了,感恩节、圣诞节、新年、春节即将接踵而至,下面分享一道节庆季会非常受欢迎的吉祥菜肴,孜然鸡脆骨,因为有鸡有骨头,向来有吉祥如意、来年出人头地的好寓意。

先把鸡脆骨用料酒、盐、十三香、孜然粉、孜然粒腌制过夜,然后撒上干淀粉和面包屑搅拌均匀,放入空气炸锅里380F,炸15分钟左右,中间翻一下面,想要更加酥脆外皮的可以适当增加炸制的时间。

油锅放少许油烧热,放入切好的洋葱翻炒均匀,快要熟的时候倒入炸好的鸡脆骨,按个人口味加盐或辣椒即可。出锅后撒上一些孜然粒和香菜末,好吃又好看的孜然鸡脆骨就可以端上桌了。

冰冻的饺子直接拿出来,在表面刷上一层薄薄的油,平铺在空气炸锅的炸篮里,360F,15分钟,中间可以把炸篮拿出来给饺子翻个面儿,做出来的饺子金黄香脆,关键是太方便了,早上迷迷糊糊爬起来把饺子扔进空气炸锅,还没醒盹儿香喷喷的煎饺就已经出锅了。

馄饨皮香蕉派
小朋友吃东西很多时候很随性,有的时候一个上午就喝掉一整杯牛奶,有的时候又好几天连碰都不想碰,其他食物也是如此,在她什么都不喜欢吃的日子里,还是让作为爸爸妈妈的我们很伤脑筋的。于是就有了今天压轴出场的这道空气炸锅版的馄饨皮香蕉派,甜甜的内馅很得小朋友的欢心,至今为止百试不爽。

虽然是道甜品,但因为完全不用加糖,还是蛮健康的,甜味全来自于香蕉。把香蕉用勺子碾成香蕉泥,在平铺的馄饨皮里放入一些,另取一张馄饨皮盖住,四周抹水捏紧封口,讲究点儿用叉子在四周压出花纹,平铺在空气炸锅或者烤盘中,在表面刷一层油,360F,10分钟左右,颜色开始变得焦黄就差不多了。脆脆的外皮,甜甜的香蕉内馅,吃的时候记得不要太心急,小心烫到嘴巴哦。
