抹茶蛋糕一直是我至爱的蛋糕之一,抹茶的清香配上奶油的香滑,简直是无法用语言表达的人间美食。今天我就手把手教小伙伴做这款美味的蛋糕,喜欢的亲跟我一起做起来吧!
准备可丽饼皮的面糊如下:
A黄油70克
B中筋面粉250克
C糖100克
D鸡蛋6个
E 牛奶750克和少许盐

1.隔水溶化黄油
2.将250克的面粉、100克的糖、少许盐、6个鸡蛋一起拌成糊状后,倒入750克牛奶拌匀后,再倒入溶化好的黄油快速拌匀后过筛,送入冰箱冷藏最少1小时

抹茶卡仕酱的材料:1.牛奶370克 2.糖45克 3.玉米淀粉25克 4.抹茶粉3茶匙 5.蛋黄3个
用锅先小火温热370克的牛奶,再准备一个小锅放入45克糖、3茶匙抹茶粉拌匀后,加入3个蛋黄拌成糊状,慢慢倒入热好的牛奶拌匀后放回小火继续煮,中间不断搅拌散热至糊状,然后用刮刀倒入干净盘里,马上盖上保鲜膜服贴的方式盖好防止冷凝水滴到里面,然后送入冷藏待用,等待完全冷却。

煎可丽饼时全程小火,等一面煎至金黄色,就翻到另外一面煎至金黄色即可

1.奶油600克 2.糖75克
2.把奶油、糖打发至6成时,把冷却了的抹茶卡仕酱打发至细腻的糊状后,倒入打发好的奶油内继续打发至8分发就可以了。

一层可丽饼,一层抹茶奶油,重复这个步骤,直到可丽饼用完。然后把蛋糕放入冰箱冷藏三小时后,洒上抹茶粉便可享用。如果有多余的奶油也可从像我这样,做适当的装饰!

做抹茶千层蛋糕最费时间的部分是煎可丽饼,全程必须小火而且很考验你的耐心,一不小心可丽饼就会穿洞,当时我也浪费了好几张饼皮呢!现在明白外面的千层蛋糕价格美丽,也是能理解的,喜欢的小伙伴也试试做吧!
