最近从青岛带回来一些非常肥美的鲍鱼,赶紧来做一道著名粤菜「鲍汁捞饭」吧!鲍汁捞饭成功的关键就是用高汤做出来的鲍汁,而传统粤菜的高汤又是用老鸡➕猪大骨➕五花肉➕火腿先焯后炒再慢炖1个多小时熬出来的。我们家庭版可以稍微简略一些,熬高汤的时候只有要鸡肉➕猪棒骨就可以了,如果有火腿/培根也可以加一点进去提味~

用料
鲍鱼 4只
鲜虾仁 200g
米饭 适量
猪棒骨 适量
鸡肉 适量(我用了鸡爪鸡胗,其他部位也行)
火腿/培根 2片
鲜香茹 100g
西兰花 1颗 约400g
姜 几片
葱段 几段
洋葱 半个
蚝油 约15g
鲍鱼蚝油/鲍鱼汁 30g
酱油 约20g
白胡椒粉 适量
步骤
1⃣️虾洗净,鲍鱼去壳去内脏,刷干净,切花刀方便入味,然后焯水备用;

2⃣️香菇金针菇洗净,焯水1分钟左右,捞出备用;

3⃣️猪棒骨几大块(我放了3大块)、鸡肉适量(我放了5个鸡爪8个鸡胗)放在水里焯一下,加一些葱段姜片和一点料酒去腥,捞出冲洗干净沥干水备用;

4⃣️姜片、葱段、洋葱块切好备用;

5⃣️热锅放锅,下姜片葱段洋葱块爆香,再将焯好水的肉回锅,中大火煸炒到焦黄上色,不用放其他调味料;

6⃣️锅里食材全部移入炖锅,加入适量水基本没过猪棒骨,煮开后加几片火腿/培根提味,转小火慢炖1小时-1小时20分钟(根据肉块大小适当调整);

煮好后高汤是有金黄色光泽的
7⃣️从煮好的高汤里取用一部分,煮开撇油,然后放入香菇,加鲍鱼汁、蚝油、酱油的混合汁,再加一点白胡椒粉,可以尝一下味道,淡了就再加些调味料,咸了可以补一点高汤;

8⃣️放入鲍鱼、虾中小火煮大约5分钟,最后放入西兰花稍微煮下捞出,摆盘;

9⃣️最后的最后,加水淀粉勾芡收汁,等汤汁浓郁即可!
