2 scant cups (425g) or one 15-ounce can pumpkin purée
1 cup (60g) bran cereal or 1.5 cup 90grams.
4 tablespoons (57g) unsalted butter, melted
1/2 cup (99g) granulated sugar or allulose for low sugar option.
2 tablespoons (25g) light brown sugar or dark brown sugar, packed. Can substitute with molasses
2 large eggs
3/4 cup (170g) buttermilk or almond milk for less diary or add yogurt for higher protein
1 1/4 cups (150g) whole wheat pastry floor or All-Purpose Flour
1/2 teaspoon salt
1/2 teaspoon ginger
1/2 teaspoon allspice
1/4 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 cup (142g) dried cranberries or raisins
Variation/cream cheese夹心:4oz cream cheese, softened beat with 1/2 cup powdered sugar/allulose. 封面为夹心版,用的是低脂的cottage cheese.
