在意大利文里提拉米苏Tiramisu, 有“带我走”和“记住我”的意思。于是,提拉米苏成了爱与情的代名词。那种甜与苦交错的口感与爱情中复杂敏感而甜蜜忧伤的感觉相通,这大概就是提拉米苏风靡的原因吧~?
此款提拉米苏,有着乳酪与鲜奶油的稠香,手指饼干的绵软,咖啡的醇厚,可可粉的干爽,朗姆酒的甜润。甜蜜如情人的呢喃。多重层次的滋味在此交织融合,换起感官与知觉错综复杂的体验!!
所以,还不快快做起来~
所需食材:手指饼干(Savoiardi),马斯卡彭奶酪(Mascarpone Cheese) 250g,蛋黄2个,细砂糖75g,水75ml,吉利丁粉15g,淡奶油150ml,咖啡酒35ml,朗姆酒15ml,可可粉

步骤:
1. 将蛋黄用打蛋器打发到浓稠,发白的状态。

2. 水与细砂糖煮成糖水,直到沸腾。

3. 糖水沸腾后关火。一边用打蛋器搅打,一边缓缓倒入第1步打发好的蛋黄。蛋黄液倒入完毕以后,继续用打蛋器搅打,直至蛋黄糊的温度下降到与手心温度接近。将冷却后的蛋黄糊放在大碗里备用。

4. 另取一碗,装入马斯卡彭芝士。用打蛋器将芝士搅打到顺滑。

5. 将打好后的马斯卡彭芝士与蛋黄糊混合拌匀。

6. 吉利丁粉泡软(这步可在一开始就准备好),加入热水混合成吉利丁溶液。把吉利丁溶液倒入第5步混合好的马斯卡彭芝士糊里,拌匀。

7. 将淡奶油用打蛋器打发到软性发泡(刚刚出现纹路即可)。加入马斯卡彭芝士糊里,拌匀。

8. 将意大利浓缩咖啡与朗姆酒按照比例混合成咖啡酒。

9. 取一片手指饼干,在咖啡酒里快速蘸一下,让手指饼干沾满咖啡酒。

10. 将蛋糕模底部用锡纸包裹。沾满咖啡酒的手指饼放入蛋糕模底部,直到手指饼铺满整个底部。并倒入一半的马斯卡彭芝士糊。

11. 在马斯卡彭芝士糊上继续铺一层蘸了咖啡酒的手指饼,并倒入剩下的一半马斯卡彭芝士糊。把蛋糕放进冰箱,冷藏五到六个小时。

12. 等芝士糊凝固以后,表面撒上适量可可粉,脱模,并用糖粉装饰即可~✌?
