好久没有晒货自制的食品了,主要是太忙,所以没有时间拍详细的制作过程,和发晒货,不过松软有嚼劲的面包真的很不错,所以很想和爱吃面包的宝宝们分享一下,图片拍的不好凑合着看吧

面包皮需要的材料:高筋面粉(bread flour) 2⃣️碗、鸡蛋2⃣️个、黄油适量、白糖8⃣️汤匙、盐1⃣️茶匙、牛奶1⃣️碗、酵母粉2⃣️茶匙,(以上量面粉的碗,需要稍微大一点的碗)。肉松面包需要的馅料:肉松和面奶。按照个人喜好也可以改加火腿,或者不加做简单的晚餐餐包也不错。

首先用1⃣️碗的牛奶,稍微加温后加入2⃣️茶匙的酵母粉和1⃣️茶匙的白糖,(添加白糖在酵母水中,可以起到加速发酵的作用)用筷子搅拌均匀后盖上锅盖,等待5-10分钟,等牛奶酵母水表面起“泡沫”就可以用了。

把发酵好的牛奶酵母水倒入盆中,然后把鸡蛋和白糖一起放进去,用筷子搅拌均匀,再把2⃣️碗面粉倒进去揉面,揉至3-5分钟左右(稍微均匀后)再把黄油倒入一起揉20分钟左右后揉成面团,放在盆里用保鲜膜封住。

【发面】方法:把水烧开后倒入大碗中,然后把2⃣️大碗热水放入烤箱中,再把面团放入烤箱发酵,(注意:烤箱的开关是关着的)然后把烤箱门关上。目的是烤箱比较封闭,再加上2⃣️大碗热水会让烤箱的温度提高并且有水分保湿,这样大大提高了发酵的效率,发酵的时间是1⃣️个小时。

1⃣️个小时后把发酵好的面团拿出来,揉成面团后(揉的时候感觉手太粘的话,可以洒少量的面粉在板上)再用擀面棍擀开,再把两边折起来再擀,这样反复重复5⃣️次后再用保鲜膜封住放置15分钟。

15分钟后把面团切成均匀的块状,再把面团搓成圆形,盖上保鲜膜再放置15分钟。

肉松面包的制作方法☝:顺序☝️图上,喜欢原味的话只要把面团擀成长方形,中间对折卷起来即可,再在烤盘上刷上一层黄油(可以防粘),然后把做好的面包摆上盖上保鲜膜。

把面包放入烤箱中,和第1⃣️次发酵时同样的方法:烤箱摆2⃣️大碗热水,关上烤箱的门,发酵1⃣️个小时(第1⃣️次发酵时候用的热水凉掉了,要重新再烧2⃣️碗)。

把发酵好的面包从烤箱中取出来,然后刷上一层鸡蛋,烤箱预热350度,烤20分钟就大功告成了

这个制作过程虽然也不是那么简单,但是成功率比较高,重点是能吃上自己做的,这么松软又有嚼劲的面包还是开心的。
