椰浆+奶油芝士,隔热水♨️待其完全融化,用手动打蛋器搅拌成糊状

把蛋黄和蛋白分离出来,蛋黄分次加入芝士糊里

快速搅拌均匀
P.S 蛋黄要分开一个一个加入,每次加入一个蛋黄后要快速搅拌均匀,然后再加入另一个,再快速搅拌均匀,如此类推!

筛入低粉(cake flour)+玉米淀粉(corn starch)

搅拌均匀

蛋白加糖打发至6-7成企身,湿性偏硬发泡,打蛋器头能拉出一个小弯钩即可。如果打蛋头拉起还成水流状,那证明打发不到位,会导致蛋糕涨不起来。如果打蛋头拉起的时候拉不出尖头,那证明已经打发过头了,打发过头的蛋糕烘烤过程会容易开裂或者搅拌时容易消泡。
(P.S. 这里的糖可以一次性全都加入蛋白里打发哦!!)

把做好的芝士蛋糕糊倒入8寸固底蛋糕模里。

底下放一盘温水,约1厘米

280华氏度(135摄氏度),放置于烤箱的中下层,烤90分钟。
P.S 低温烘烤,减少面部开裂的机率

烤好后,芝士蛋糕放在烤箱里焖10分钟左右再拿出来,然后稍凉后,建议先放冰箱冷藏1-2个小时后再享用,味道更佳哦
