?很喜欢这款北海道戚风蛋糕杯,特别是里面的那个蛋奶沙司内馅,好吃得停不下口,我不会告诉你我在一边做的时候一边偷吃的?。
这款蛋糕杯属于少面粉形蛋糕,所以在烘烤的时候容易涨得高,但出炉后也会容易坍塌得快,不过没所谓的,因为我们还要把蛋奶沙司挤入蛋糕中间,把原本坍塌的蛋糕体撑起来。吃的时候掰开中间,会流心的哦!!?
以下的配方刚好做了19个方形蛋糕纸杯。

趁热快速加入黄油,搅拌至其融化并混合均匀

倒入模具中,待凉后,放入冰箱冷藏一个小时或以上

然后拿出来倒入大盆里,用刮刀或者打蛋器压捣成糊状,再搅拌均匀

淡奶油打发至硬性发泡,失去顺滑和光泽,在油水分离的前一刻,即可。

把淡奶油混合进蛋奶糊里,搅拌均匀,放入裱花袋里备用。
如果还没用到的情况下,先放回冰箱冷藏保存。

把蛋白分两到三次加入蛋黄糊里

用上下翻拌的方式翻拌均匀

把蛋糕液倒入预备好的蛋糕纸杯里,5-6分满即可。

预热烤箱至330华氏度(165摄氏度),烤18-20分钟,看表面变成金黄色就可以啦!烤完后拿出来待凉。

等完全凉透以后,挤入内馅

制作小贴士
1. 建议先做蛋黄糊后打发蛋白,以免打发后的蛋白因放置过久而消泡哦!!
2. 把蛋糕糊倒入纸杯的时候,切忌过满,5-6分满就够了,过满会导致烘烤过程中膨胀导致面糊就会溢出来了。
