最近码的文章有点多,导致我都有点词穷了。不过这款冻芝士是我吃过的最好吃的一款,一点都不腻,中间夹的巧克力蛋糕片混合冻芝士,手感完爆。简直是不可言喻的美味,做好脱模后,瞬间就被我家俩小吃货消灭掉一半………
可可蛋糕胚的做法链接在这里,文章里的量是6寸蛋糕胚,本文做的是八寸,但是不用担心,我们用的是蛋糕片,一个薄片就够了,所以可以完全按照原文6寸的量去做好,放入8寸模具里来烤,不过时间相对要缩短一半的时间哦
准备材料:巧克力薄脆,黑巧克力60g,榛子酱60g,奶油奶酪240g,淡奶油380g,蛋黄4个,细砂糖100g,玛格丽特酒40g,吉利丁片3片,八寸可可蛋糕片一片
把黑巧克力隔水融化,然后拿出来加入榛子酱搅拌均匀后再加入薄脆混合后放入八寸模具里,把面抹平然后放入冻箱,冻10分左右。

把蛋黄加入40g糖,然后隔水加热开始搅拌,搅拌成略浅浓稠状,然后拿到旁边备用。没搅拌到浓稠千万不能停,因为底下在加热,停了底部就成蛋黄块了。

然后把吉利丁片用冷水泡发好,然后隔水加热融化备用。

(这步全程隔水加热搅拌)奶油奶酪隔水搅拌至奶酪顺滑后加入之前弄好的蛋黄糊,搅拌均匀后加入玛格丽特酒搅拌均匀,在加入之前准备好融化好的吉利丁,搅拌均匀。备用。

淡奶油加入剩余的60g糖打发至有明显纹路(不需要完全打发)然后加入之前准备好的奶酪糊,搅拌均匀。

把之前放冻箱里的模具拿出来,加入一半奶酪糊,然后放冻箱冰10分钟,再把之前准备好的可可蛋糕片放进去(可可蛋糕片制作方法我之前的文章有教)然后在把剩余的奶酪糊全部倒进去,放冰箱保存,4-5小时后就可以脱模了。
