这个方子适合28x28x3的方形蛋糕盘,刚好一盘子,厚薄度适中。当然也可以用其他大小形状不一样的盘子,只是做出来的蛋糕胚的厚薄度不一样而已……

把5个鸡蛋的蛋黄和蛋白分离出来。
牛奶+食用油+15克糖混合搅拌均匀成米浆的形态

筛入低粉

预热烤箱至165摄氏度(330华氏度)

厨师机用中高速打发蛋白,剩下的35克糖分三次加入蛋白里打发....
第一次打发至出现泡沫时加入

第二次打发至接近湿性发泡时加入

第三次打发至泡沫即将完全消失的时候加入

然后再打发至7成企身,能拉出小尖头即完成。
P.S 1. 如果打发至硬性发泡,拿起打蛋头的时候拉不出尖头,那证明蛋白已经打发过头了,这个时候我建议重新打发一份,否则蛋白打发过头会导致烘烤时蛋糕开裂。
2. 如果拉起打蛋头,尖头过长或者还呈现流动状态,那证明蛋白还没打发到位,还需继续打发。

把1/2的蛋白加入到蛋黄糊里翻拌均匀

再把蛋黄糊倒入剩下的蛋白里搅拌均匀

建议搅拌好后再翻倒一次检查一下面糊是否完全混合均匀……

28X28X3的方形蛋糕开盘,垫上一层烘烤防粘布/防粘烘培纸(parchment paper)

把面糊倒入铺平,可以用刮刀帮助调整

165摄氏度(330华氏度),中层烘烤20分钟。

拿出一张新的蛋糕纸铺在桌上,蛋糕烤好拿出来放凉3分钟左右脱模

然后趁热空卷起来定型一两分钟

再把蛋糕摊开待凉,这个时候定型过的蛋糕胚已经有折过的纹路,待会凉了之后再卷的时候就容易多了,而且减少了裂卷的可能性。

把榴莲肉放入搅拌机里高速搅烂成泥

淡奶油加砂糖混合打发至硬性企身,一定要打发至十分硬性才可以哦……

然后把榴莲泥和打发好的淡奶油混合搅拌均匀

把夹馅全放到蛋糕胚上

把榴莲夹馅抹开,靠近自己的一边抹厚点,另一端抹薄一点

然后利用擀面杖辅助,把蛋糕卷起来

再往擀面杖一方拉一下,把蛋糕卷卷实
