榴莲被称为果中之王,其浓郁的香味更让人又爱又恨,有些人会敬而远之,但有些人会为之而倾倒,更是爱不释手,对于榴莲味的食品简直无法抗拒。这款芝士蛋糕里浓浓的芝士味里透漏着阵阵的榴莲清香,简直让我们这些榴莲爱好者吃得停不下口了。这分量适合一个8寸榴莲芝士蛋糕。

用新鲜榴莲的把榴莲剥壳取肉切成小块,用冷冻榴莲的可以稍作解冻然后切成小块

把榴莲肉和奶油奶酪一起放入搅拌机里,奶油奶酪无需提前拿出来软化,直接从冰箱拿出来用就可以。

再加入淡奶油(heavy whipping cream)

开高速搅拌成糊状

再倒入干净的容器里,加入蛋黄

搅拌均匀

再筛入低筋面粉和玉米淀粉

搅拌均匀

蛋白加几滴柠檬精油,白砂糖分三次加入蛋白里打发,打发至湿性发泡企身。打蛋头能拉出小尖角即可。千万切记不要打发过头哦……
P.S 糖的分量可以按照自己喜欢的甜度和所用的榴莲的甜度来调配。

然后把蛋白分两至三次加入芝士糊里

用上下翻拌的方式翻拌均匀。

烤箱预热至140-150摄氏度(280-300华氏度。(温度按各家烤箱脾气决定)
蛋糕模底下和周边垫上一层蛋糕烘培纸,蛋糕模周边抹上一层黄油,用于固定蛋糕纸。蛋糕模建议用固底蛋糕模,活底蛋糕模容易进水,即使包上锡纸有时候也难以避免出现这种情况。
然后把面糊倒入模具里,把蛋糕模往桌上轻率几下,把面糊里的空气震出来。

用水浴法烤,蛋糕模底下放入一盘1cm高的温水,烤90分钟。

烤好拿出来倒扣或者往桌子上摔几次下,再次把蛋糕里空气震出,减少造成蛋糕凹面的情况。

建议稍凉后放入冰箱冷藏3-4小时后再享用。
