渐层做得不够完美,但是我已经尽力了,希望君君和小伙伴们不要神烦哦,我保证这个是最后一篇关于抹茶慕斯蛋糕的帖子哈哈哈哈🤣🤣🤣
动手开始吧……

慕斯底抹茶味蛋糕片的材料图
材料是6寸的戚风蛋糕配方:3颗鸡蛋,色拉油30克,细砂糖50克,牛奶50克,低筋粉面60克,一大勺的抹茶粉,几滴柠檬汁和香草精..

首先先把鸡蛋蛋白和蛋黄分离出来,然后在蛋黄中加入15克的细砂糖搅拌均匀后,慢慢地倒入色拉油乳化均匀后再倒入牛奶搅拌均匀..

再把低筋面粉和一大勺的抹茶粉混合后过筛到蛋黄糊中搅拌均匀...

接着打发蛋白霜

打发到粗泡时滴几滴柠檬汁,继续以低速打发,当蛋白霜体积膨胀到两倍时倒入一半的细砂糖继续打发...

当蛋白霜慢慢开始细腻出现纹路时,倒入剩余的细砂糖继续打发..

打发到打蛋器提起出现小尖头状态时就是中性发泡了,不要再继续打发了...

将1/3的蛋白霜跟抹茶蛋糊用翻拌地收翻拌均匀,再倒入剩余的蛋白霜里继续以翻拌的手法均匀,然后倒入事先准备好的烤盘中,震几下送入烤箱325摄氏度烤20分钟左右……

烤好的蛋糕立刻出炉,把四角的烘焙纸撕开放凉备用
接着慕斯糊部分

材料🈶️:mascarpone 150克(喜欢这款奶酪味)牛奶125克,细砂糖90克,淡奶油200克,吉利丁粉2包..抹茶粉适量

首先先把牛奶放进微波炉加热30秒后倒入全部细砂糖搅拌均匀后倒入隔水融化的吉利丁,搅拌均匀

再把牛奶倒入事先软化的mascarpone 中彻底搅拌均匀..备用

接着打发淡奶油,打发到6成发,表面开始形成纹路却会流动状态就是6成发...

接着把淡奶油一次性倒入奶酪糊中搅拌均匀后慕斯糊就做好了..接着开始做渐层抹茶部分..

在每小碗依次放入抹茶粉..颜色由浅到深..

每碗中加入一点点的水,稀释均匀

再依次倒入奶酪糊,原味的奶酪糊130克,淡浅绿100克,浅绿色100克,中绿色80克,深绿色60克(哈哈哈,不知道该怎么说,就这样解说,希望小伙伴们不要笑哦)

首先先在蛋糕片上压出一块蛋糕做基底,然后倒入原味的奶酪糊..

接着从中间慢慢倒入淡浅绿...

接着再从中间慢慢倒入浅绿色,让它们慢慢扩展开来..

接着再从中间倒入中绿色

最后倒入墨绿色,心塞手抖一下,墨绿色滴到中绿色里了,哇哇哇...宝宝要哭了……我的渐层抹茶慕斯蛋糕就这样不够完美了……回到正题上,接着放入冰箱冷藏4小时以上再来脱模..

脱模用电吹风围着慕斯吹几圈后小心慢慢地脱模,然后根据小伙伴们自己的想法来装饰蛋糕..

切开中间有很美的渐层抹茶色..

还可以做一人份的抹茶慕斯蛋糕,底部也是放抹茶蛋糕,接着倒入原味的奶酪糊,第二层是抹茶味的奶酪糊..

脱模后就可以好好地装饰了...红色巧克力是我把巧克力隔水融化后画在烘焙纸上等干了之后撕下来就可以美美地装饰在慕斯上了..
