凤梨酥源自于台湾,是一款很出名的甜点。其实凤梨也就是我们平常说的菠萝。市面上很多凤梨酥为了降低成本,都是用冬瓜蓉或者用冬瓜蓉混合菠萝做的。但是自己吃的当然要吃原汁原味的菠萝肉做的纯正凤梨酥啦!!
这个分量大约可以做30-32个凤梨酥。

首先把菠萝去皮切成小块放入料理机里搅打成泥,不过建议不要打碎得太彻底,个人觉得留一点碎渣口感更好。

把凤梨泥沥干水分。
因为凤梨的水分含量比较大,建议尽量把水份沥干一点再放入锅中炒,这样可以省点炒馅的时间。

把馅倒入不粘锅里,加入蜂蜜和冰糖

用中小火一直煮至其水份被蒸发干,馅能抱团即可。⚠️记得煮的时候要一直不停地翻拌哦!!

做好的凤梨馅放凉备用……建议提前一天把馅做好放冰箱冷藏一夜再用。

黄油室温完全软化,然后用电动打蛋器打发至顺滑

筛入糖粉,混合均匀并继续打发至蓬松状态

加入蛋黄

继续用打蛋器打发至完全混合并打发至蓬松状态

接着筛入低筋面粉、杏仁粉和奶粉。用稍硬一点的刮刀把粉类和黄油混合在一起,然后用手把它们揉成面团……(建议可戴个手套再揉面)
P.S 因为各家面粉的吸水力不一样,这个做的时候可以按照自己所用材料的实际情况稍作调整……

混合揉成面团即可,⚠️千万别揉搓过度哦……然后盖上保鲜膜放入冰箱里冷藏醒面15-20分钟。(如果揉好的粉团不粘手,也可以直接包馅,省略冷藏这一步)

醒面后把面团拿出来分成若等份,约15克/粉。

把做好的凤梨馅拿出来也分成若等份,15克/份。

拿出一个酥皮按扁平放入凤梨馅

压模

预热烤箱至165摄氏度(330华氏度)

然后放入烤箱里的中/中下层,烤15分钟后取出来把凤梨酥反一下,放进去再烤15分钟,途中要注意观察上色度,烤至上色,金黄即可。
⚠️建议连模具一起烤哦……以防烘烤的时候凤梨酥变形哦!
