从小一直很喜欢吃奶糖,从大白兔到uha一直都是家中常备。牛轧糖这种加了坚果的更是最爱,嚼起来好香。吃过不同品牌的牛轧糖,印象最深的还是小时候那种很便宜的花生牛轧糖,虽然有点硬但很朴素花生也很香,回忆满满。
实践了一番自制牛轧糖之后总结下来就是自己做的比外面新鲜,奶香更浓,说实话成本不比外面便宜很多,但没有外面那么多添加剂。
材料:棉花糖300g(我喜欢卡夫这款,空口吃也很喜欢,不会很甜而且好大一个吃着好满足),黄油50g,生花生一袋(300g左右),熟黑芝麻70g,全脂奶粉130g。
花生也可以用熟的,用之前烤箱稍微加热一下会香一些,而且太冷的花生倒进去牛轧糖不太好混合。

1.先平底锅下一点植物油,小火把花生炒熟,一定要有耐心不然就糊了。
2.给花生剥皮,炒花生用这种带皮的花生比较不容易糊,但剥皮还是挺麻烦的一定要有耐心。注意要等凉一点再剥不然会烫手

3.把黄油小火融化,加入棉花糖慢慢炒融,一定不要大火噢,很快就会融化的

4.等棉花糖完全融化之后加入奶粉搅拌至没有奶粉颗粒,别太用力噢,要温柔而快速(虽然这么说有点难哈哈),我搅拌的时候飞出去好多奶粉😂😂😂

5.倒入花生和黑芝麻用力翻拌到混合均匀,稍微有点粘要努力一点哈哈,别把锅刮花了。

6.拌好之后倒入放了油纸或烘焙纸的烤盘中整形成长方形之后让它降温完全冷却,可以放到冰箱冷藏一下。没有冷却就切很黏的

切好之后就完成啦,我一边切一边把边边角角都吃掉了,好好吃!黑芝麻真的是点睛之笔,芝麻香和奶香太搭了!完全停不下来
