今天来分享8寸的戚风蛋糕配方:鸡蛋5颗,牛奶60克,色拉油50克,细砂糖70克(20克放入蛋黄,50克放入蛋白)低筋面粉90克,几滴柠檬汁和香草精..

首先还是先把蛋黄蛋白分离出来,备用..

接着倒入50克的色拉油搅拌均匀后,倒入60克的牛奶搅拌均匀..

接着倒入20克的细砂糖搅拌均匀,搅拌到细砂糖完全融化的状态……

接着滴入几滴香草精搅匀..

接着分两次筛入90克的低筋面粉,每筛入一次面粉搅拌均匀后再筛入第二次的低筋面粉搅拌均匀后,蛋黄糊就做好了..

接着打发蛋白霜

蛋白打发到体积膨胀两倍时滴入几滴柠檬汁,继续以低速打发..

蛋白打发至粗泡时加入第一次的细砂糖,继续以低速打发..

蛋白打发到蛋白开始变细腻后加入第二次的细砂糖,继续打发...

蛋白打发到湿性发泡时倒入剩余的细砂糖继续以低速打发..

打发好的蛋白霜,提起打蛋器出现直直的小尖勾状态,就是干性发泡了,不要再继续打发了,也不要打发火腿,这样烤出来的蛋糕表皮容易开裂.

接着舀1/3的蛋白霜跟蛋黄糊搅拌均匀,用翻拌再结合切拌的手法进行混匀..

再把蛋黄糊倒入剩余的蛋白霜里,继续以翻拌和切拌的手法进行混匀,千万不要太大力的画圈圈,这样面糊很容易消泡,要轻而慢地面粉搅拌均匀..这样烤出来的蛋糕松软可口..

搅拌均匀后面糊质地细腻光滑有点浓稠,如果拌好的面粉比较希,说明你搅拌手法不对面粉消泡了..

在电饭锅中滴几非常少许的色拉油防粘..用毛刷刷均匀..

然后把面糊倒入锅中,震几下震出面粉中的小气泡..

把电饭煲选项选择cake的方式,大概烤一个小时左右...在这期间你可以去做其他事情了……

烤了一个小时的戚风蛋糕出炉后,倒扣在烤架上放凉..(温馨提示:如果不确定蛋糕到底烤好了没有,可以用筷子🥢插进蛋糕,拿出来筷子上没有蛋糕渣很干净说明蛋糕已经烤好了)
