各位亲,我又来码文赚金币啦😂今天我要分享的是一道非常传统的菜 — 广式咸汤圆,我的秘制版😍咸汤圆是我们广东地区冬至和元宵节的必备款哦!事不宜迟,咱们开始吧!

两人份量所需要的食材:
糯米汤圆适量 (可用现做的或冷冻的汤圆),
瘦肉适量,
腊肉 1 小块,
腊肠 1根,
瑶柱30克,
虾米30克,
冬菇6朵,
萝卜1条(圆萝卜或长萝卜都可以),
大白菜米颗,
咸蛋1只 (可以用整只熟咸蛋或咸蛋黄,是我做此汤的Secret ingredient 呢!)
鲮鱼饼适量(正宗的广式咸汤圆是有放打成鲮鱼滑煎成的鱼饼,但我身处超级大农村,从来没在当地华人超市见过鲮鱼,所以就没放,如果能买到鲮鱼的不妨试试将鲮鱼加香菜打成鱼滑煎成鱼饼放入汤里,超级鲜美呢!)
鲜鸡汤两碗或两罐,
葱3根,
香葱1小把,
姜3片,
大蒜2瓣。

食材准备步骤:
1. 备好要用的汤圆;
2. 痩肉洗净切成小片,并用少许生粉,盐,白胡椒粉,米酒,酱油和麻油拌匀腌制半小时左右;
3. 腊肉洗净去皮切成小块,腊肠去肠衣切小片;
4. 瑶柱和虾米洗净泡发30分钟,泡好之后水留用;
5. 冬菇泡发洗净剪柄切成薄片备用;
6. 萝卜去皮洗净切成丝,大白菜洗净切成小长条;
7. 熟咸蛋去壳切成小块;
8. 鲮鱼加香菜打成鱼滑,因为我买不到,所以没放;
9. 备好要用的鸡汤;
10. 葱洗净切成薄片,香菜洗净切成小段,姜去皮切成丝,大蒜去皮切成蒜茸。

步骤:
🥕1. 准备一个汤锅,锅中倒入备好的鸡汤和三碗水,中火开煮;
🥕2. 热锅中加入少量油,油热后转中火加入姜丝和蒜茸翻炒几下;

🥕 3. 此时加入腊肉和腊肠,翻炒至出油;

🥕4. 腊味炒至出油后加入瑶柱,虾米和冬菇,翻炒大概两三分钟;

🥕5. 将少量盐,白胡椒粉,酱油,蠔油,和麻油放入炒锅中,将食物翻炒均匀然后放入旁边煮滚鸡汤的汤锅里;

🥕6. 然后再将切好的萝卜丝放入鸡汤中,煮十五分钟;

🥕7. 十五分钟后将备好的咸蛋,瘦肉,和大白菜放入汤锅里,再煮五分钟左右;

🥕8. 此时另开一汤锅,加水煮滚,将备好的汤圆放入滚水中,煮至全部汤圆浮起为熟;

🥕9. 这时候锅里的汤和菜都煮好了,将汤圆捞起放入到菜汤里,并加入备好的葱片和香菜段;

🥕10.加麻油,试味后即可享用!(我没有另外加调味料,只是炒腊味时加过一次调料,腌过的猪肉和咸蛋都是咸的)

咸蛋黄完全融在了汤里,汤汇聚了蛋黄的咸香,腊味,和干海味的精华,汤圆香滑软糯,再吃点萝卜和菜,这搭配简直是令人吃得停不下来呢!😋😋😋
还有哦,这汤底还可以做米粉,河粉和面条哦!🍲
