抹茶控的妹子们看过来🤗这款抹茶提拉米苏瑞士卷真的非常好吃..今晚要速战速决,话不多说开始吧……

材料有:牛奶65克,低筋面粉50克,抹茶粉10克,全蛋一颗,4颗蛋黄,4颗蛋白,细砂糖70克,色拉油50克,少许香草精和柠檬汁.
今天我用的烤盘size:长13寸,宽9.5寸

首先先把4颗鸡蛋的蛋白和蛋黄分离出来,留一颗全蛋..

接着把色拉油倒入锅中加热到85度左右……

在加热色拉油的同时先把低筋面粉和抹茶粉过筛搅拌均匀..

接着把加热过的色拉油一次性倒入面粉中,搅拌均匀(这里跟大家说说,为什么要把色拉油加热,加热过的色拉油跟面粉一起搅拌后面粉会比较细腻光滑,待会烤出来的蛋糕口感比较佳)

面粉跟色拉油拌匀后磕入一颗全蛋搅拌均匀..

接着把4颗蛋黄分两次加入面糊中,每加入一次搅拌均匀后再加入另外一次..

最后滴几滴香草精搅匀后面糊就做好了..

搅拌好的面糊非常细腻光滑……备用...
打发蛋白霜

接着打发蛋白霜,蛋白打发体积膨胀两倍以上滴入几滴柠檬汁,继续以低速打发..

蛋白打发粗泡状态时加入第一次的细砂糖,继续打发..

打发到表面开始出现纹路时倒入第二次的细砂糖,继续打发..

打发到蛋白开始起身状态后倒入剩余的细砂糖继续以低速打发..

蛋白打发至提起打蛋器出现垂直的弯勾状态就是湿性发泡了,可以了!不需要再打发了..打发过头的蛋白霜让容易让瑞士卷表皮开裂...
接着把烤箱预热325华氏度25分钟...

接着舀1/3的蛋白霜跟面糊以翻拌再结合切拌的手法进行混匀..

混匀后把面糊倒入剩余的蛋白霜中,继续以翻拌和切拌的手法进行混匀..

混匀后的面糊非常细腻光滑……

接着倒入事先准备好的烤盘中……

倒入烤盘中用抹刀把表面抹平整后震几下,把面糊中的小气泡震出来,接着放入提前预热好的烤箱中上层325华氏度烤18分钟左右就可以出炉了……

出炉后震几下,放在烤架上,把四面的烘培纸撕开放凉备用……

在蛋糕表面盖上一张烘培纸以防表面变干..
装饰瑞士卷..

接着就开始做夹在中间的馅料,今天用到是50克mascarpone cheese和80克的coolwhip一起搅拌均匀...接着把蛋糕不平整的四边切掉一些,让蛋糕片四边平整,这样卷出来的蛋糕比较整齐漂亮些……

由于刚才做到一半,我家小家伙醒来哭了找我,导致我忘记照抹奶油的部分🤪🤪🤪,不过也很简单,在瑞士卷还有一点温度时就要开始卷了,不要等到彻底放凉了再卷,很容易会导致开裂,把奶油抹在蛋糕表面,借助擀面杖把蛋糕卷起来(卷时如果容易移动,可用一只手拿擀面杖这头,另一只手稍按住蛋糕的另一头)

蛋糕卷卷好后,接口处朝下,包好入冰箱冷藏一个小时以上定型

时间的缘故我才放进冰箱冷藏20分钟,就拿出来切了,最好要放一个小时以上,这样切出来的蛋糕卷会比较整齐漂亮..

切好后放点水果撒上一些糖粉装饰一下就完成啦……淡淡的抹茶味结合浓郁的mascarpone cheese口感棒极了...
