过去用面包机做过2次面包,都没成功,这次采用比较费工的中种法,终于成功了,看到变得胖嘟嘟的面团真是无比欣慰啊。
中种法比普通做面包多了1次发酵+1次揉面。
胖仔喜欢吃椰蓉,于是上网搜了一个心形椰蓉面包的食谱来做,这个食谱奶味略淡,下次做会考虑把一部分牛奶和奶粉替换成淡奶油。这个配方不太甜,不建议减糖。
所需食材(6个面包)
中种面团:
高筋面粉140g、牛奶50g、鸡蛋1个、白糖10g、酵母2g
主面团:
高筋面粉20g、低筋面粉40g、牛奶35g、鸡蛋1个、白糖30g、盐2g、奶粉7g、黄油25g
椰蓉馅儿:
黄油30g、白糖25g、鸡蛋3/4个,牛奶30g、椰丝60g
烹饪步骤
1、将中种面团所有食材丢进面包机,选择揉面模式,发酵至2.5倍左右大小,大约全程约1.5小时左右。

2、将面团取出,切成小块,丢回面包机,加入主面团中除了黄油以外的所有食材,选择揉面模式,揉面30分钟左右。

3、加入软化好,切成小块的黄油,再次选择揉面模式,发酵至面团比原来大2倍左右,全程大约1.5-2小时左右。可以拉出手膜即可。

4、将面团排气后,分成6份,松弛15分钟。

5、将椰蓉材料搅拌均匀,黄油需要提前软化好,牛奶先加入一半,再一点点加入,让椰丝完全吸收即可。

6、将面团擀成圆形,像包包子一样包入一份椰蓉馅料。压扁。

7、用擀面杖将饼擀成椭圆形,注意面团一定要松弛过再擀,太硬的面团很容易擀破,动作要轻柔一些。如果第一个擀破了,就让面团多松弛一会儿再继续包。

8、将椭圆饼左右对折。

9、将椭圆饼上下对折。

10、将饼从中间切一刀,最后留1-2cm,不要切断。

11、将切开的两端扭成切面朝上,整形成心形。

12、再锡纸上喷上或刷上少量油,将面包放在锡纸上,转移到温暖的地方,发酵至2倍左右大小,大约20分钟左右。刷上刚才剩下的1/4-1/5全蛋液。

13、烤箱中层355F烤15分钟左右至表面金黄,15分钟后可以放到烤箱上层快速上色。

14、面包放凉就可以吃啦。满满金黄的椰蓉,超级香甜呢。
