前言
上一周都是分享低卡低脂的美食,吃了一周的低卡食物,感觉这周要好好犒劳一下自己的胃,今天给大家分享一款高热量的美食香葱肉松蛋糕卷,非常非常好吃哦^_^偶尔吃一吃不要担心会胖了,美食当前减肥先放放吧~🤣🤣🤣
介绍一下材料~

配方:鸡蛋5颗、低筋面粉100克、细砂糖70克、玉米油50克、牛奶70克、香葱适量、肉松适量、美乃滋适量、黑白芝麻适量、几滴柠檬汁和香草精~
烤盘size:9inch x 12inch

(首先要保证所有做蛋糕嘚容器是无油无水的状态下进行操作~)先把鸡蛋的蛋白和蛋黄分离出来~

接着在蛋黄中加入20克的细砂糖,搅拌到细砂糖完全溶解的状态~感觉不到颗粒为止~

接着倒入玉米油,用手动打蛋器搅拌均匀~搅拌到玉米油完全跟蛋黄糊混合的状态~

接着倒入牛奶,继续用手动打蛋器搅拌均匀~

接着过筛加入低筋面粉,继续用手动打蛋器搅拌均匀,搅拌到无面粉颗粒为止~

超后滴入几滴香草精提提味~这里的香草精可加可不加~家里有香草精的小伙伴就滴入几滴~没有也没有影响哦~

蛋黄糊搅拌均匀后,放置一旁备用~
接着打发蛋白霜

打发蛋白霜,细砂糖分三次加入蛋白中~开始吧!
烤箱开始预热,调到350华氏度~

蛋白打发体积膨胀两倍之后,滴入几滴柠檬汁,这里的柠檬汁起到稳定蛋白霜作用,没有柠檬汁可以用白醋或者塔塔粉代替~

蛋白打发粗泡状态加入第一次的细砂糖,继续用电动打蛋器以低速打发~

蛋白打发泡沫细腻,表面开始慢慢出现纹路时加入第二次的细砂糖,继续以低速打发~

打发至湿性发泡后倒入剩余的细砂糖,继续以低速打发~

做蛋糕卷所需蛋白打发度中性发泡就可以了~什么为之中性发泡呢?提起打蛋器出现弯勾状态,不要再打发了,如果再继续打发就变成干性发泡了,这样烤出来的蛋糕卷卷地时候很容易开裂~

舀1/3的蛋白跟蛋黄糊用翻拌和切拌的手法进行搅拌~跟画Z字一样的手法~

大致搅拌均匀后,把蛋黄糊倒入剩余的蛋白霜中,继续用翻拌和切拌手法彻底搅拌均匀~

接着在烤盘中放入烘培纸~

面糊倒入烤盘中,用刮刀大致抹平表面,震几下,接着加入肉松、香葱、黑白芝麻,这里的量根据自己喜好选择~

全部食材放好后,送入烤箱345华氏度烤25-30分钟~

香喷喷热腾腾的香葱肉松蛋糕卷就烤好了,非常的香,感觉满屋子都是肉松蛋糕卷的香味^_^

接着把四边的烘培纸撕开来散热~直接这样切块吃就已经非常棒了👏

大致5分钟左右趁着蛋糕还有温度就要开始卷蛋糕啦!这里根据自己喜欢放不放美乃滋都可以~卷好后用烘培纸包住定型半个小时再来切块~
