首先先给大家分享一款网红水果蛋糕,本来打算做这款,但是花粉过敏难受,今天就偷懒分享一款简单款的西瓜蛋糕吧!呵呵

前言
总感觉自己还没来及享受春天的气息,这几天的天气直接跨过春天,一下子变成夏日炎炎了。再加上最近花粉有点严重🤧🤧🤧大门不出 、二门不迈,每天懒洋洋哒~所以甜品方面跟新会慢一点哈~今天给大家分享一款非常讨喜的西瓜🍉造型蛋糕,小盆友的最爱^_^好了,不多说了,开始吧!👏👏👏
6寸戚风蛋糕配方

材料配方:牛奶50克、鸡蛋3颗、玉米油35克、低筋面粉55克、细砂糖45克、几滴柠檬汁,红色和绿色食用色素各一滴~《一个6寸活底模具》

首先先把鸡蛋蛋白蛋黄分离出来,备用~

在蛋黄中加入10克的细砂糖,搅拌到蛋黄开始发白,完全感觉不到细砂糖颗粒为止~

接着加入35克玉米油,继续用手动打蛋器搅拌至完全溶解的状态~

接着在蛋黄糊中加入50克的牛奶,继续搅拌均匀~

接着在蛋黄糊中筛入过筛的低筋面粉,用手动打蛋器搅拌至感觉不到面粉颗粒的细腻光滑状态~

接着准备两个干净无水无油的容器,把蛋黄糊分成三份~

在一个小碗中舀出3勺蛋黄糊,另一个碗中舀出4勺蛋黄糊,另外一碗中的蛋黄糊是剩余最多的蛋黄糊~

接着在4勺蛋黄糊中滴入一滴绿色的食用色素,搅拌均匀~这里小伙伴们想要用抹茶粉代替也是可以嘚~在剩余最多的蛋黄糊中加入红色的食用色素,也搅拌均匀,另外3勺蛋黄糊就保持原味哒~(现在颜色看起来有点深,等待会跟蛋白搅拌后,整体颜色会浅一点)
打发蛋白霜

开始打发蛋白霜,把35克的细砂糖分三次加热蛋白霜中~这时候把烤箱325华氏度预热15分钟~

蛋白霜打发体积膨胀两倍以上滴入几滴柠檬汁,继续以低速打发~

蛋白打发粗泡状态加入第一次的细砂糖,继续用电动打蛋器以低速打发~

蛋白打发泡沫细腻,表面开始慢慢出现纹路时加入第二次的细砂糖,继续以低速打发~

打发至湿性发泡后倒入剩余的细砂糖,继续以低速打发~

这款西瓜蛋糕所需的蛋白打发度中性发泡就可以了~什么为之中性发泡呢?提起打蛋器出现弯勾状态,不要再打发了,如果再继续打发就变成干性发泡了。

接着在3勺原味的蛋黄糊中加入3勺的蛋白,在4勺的绿色蛋黄糊中加入4勺的蛋白霜,剩余的蛋白霜加入红色蛋黄糊中,各自以翻拌结合切拌的手法搅拌均匀~切记不要太大力搅拌,会使蛋白消泡,这样烤出来的蛋糕会开裂、塌陷等现象~

各自搅拌均匀后的蛋糊状态~面糊是细腻光滑状态。

接着把原味的蛋糊和绿色的蛋黄各自装入裱花袋中,用剪刀在裱花袋剪个小小口~准备一个6寸活底模~垫上一张烘培纸~

接着在模具底部边缘挤上一圈绿色蛋糊,花粉过敏太难受了导致严重手残,挤嘚有点丑,哈哈哈~

接着把原味蛋糊挤在绿色蛋糊边缘挤一圈~同样这样方法挤上绿色蛋糊后再挤上原味的蛋糊~

绿色蛋黄和原味蛋糊挤三层后,在模具中间倒入红色蛋糊,切记要慢慢倒入,再轻轻地晃平整一些~

跟以上同样的方法把所有面粉挤到模具中~最后轻轻晃动模具,震几下送入预热好的烤箱310华氏度烤25分钟,再转325华氏度烤10分钟左右~

烤箱的温度会随着天气的升温而变化,所以我喜欢在烤蛋糕时,在烤箱中放入一盘清水来降低烤箱的温度,这样烤出来的蛋糕吃起来比较绵密,不会太干~

蛋糕烤好后出炉,震几下倒扣在烤架上放凉后再脱模~脱模方法是先轻轻拨动蛋糕边缘,让蛋糕跟模具分离,烤好的蛋糕弹性十足,不用担心会压扁。接着顶起底部,再拨动蛋糕边缘,让蛋糕底部从模具底部脱离出来,撕下烘培纸,蛋糕就完美脱模了,

再把蛋糕切成块,装饰上黑芝麻,看着非常像西瓜有没有🤣🤣🤣夏天到了,知道小伙伴们都在减肥中,今天这款西瓜蛋糕这次就不抹奶油了,直接切块吃也是棒棒哒~看着就解暑🤩🤩🤩其实找各自理由让自己偷懒一下呵呵~
