今天分享6道家常超下饭五花肉料理,让我们省点做饭时间肥宅快乐,也好过呆在油烟高的厨房当黄脸婆~~~

基本款豆瓣酱煎五花肉

食材:带皮五花肉两条,不辣豆瓣酱1大勺,冰糖,酱油
步骤:
1. 五花肉切片,厚片薄片都行,厚片就煮久点,薄片就快熟点
2. 开中火把五花肉排排好煎一会,两面各煎5-10分钟,煎到油已经控制不住要飞溅到你脸上时,火稍微调小一点,下豆瓣酱,快速翻炒至每片五花都沾到豆瓣酱后,开大火,加水没过肉,加冰糖,盖锅盖,水沸后转中小火,这时可以试一次味道,咸了加水或冰糖,甜了加豆瓣酱或盐,再焖30-50分钟,等水基本干了,五花肉的size缩成原来size的3/5就差不多了

基本上煎完五花的锅都会剩厚厚的一层猪油,留起来炒青菜什么的无敌香~
升级款豆瓣酱煎五花肉配煎土豆块
食材:同上+滚边土豆块
步骤:五花肉处理步骤同上,五花肉起锅后转中火,下土豆块,不时翻炒一下土豆防止粘锅
装盘时绕着五花肉围一圈就好了

自家制蜜汁叉烧
食材:去皮五花肉(去皮很重要!)1-1.2磅,蜂蜜4tbsp, 红糖2tbsp, 酱油3tbsp, 蚝油(海鲜酱更好)2tbsp, 十三香/五香粉1tsp(可不要),有红色素会更美(我米有,用了一点玫瑰腐乳代替)
步骤:请原谅我的愚蠢...五花肉的照片被删掉了,拿叉烧肉照片代替吧。。
1. 五花肉洗净吸干水分塞进密实袋,把所有调料倒进装着五花肉的密实袋,封好口按摩几下肉和调料,然后放冰箱腌制24-48小时

2. 腌好的肉用烤箱400度烤40-60分钟,不同牌子烤箱的performance不一样,每15分钟要看一次肉的状态,烤到边稍微有点焦就差不多了,稍放凉20分钟就可以切片上碟
*想要肉的蜜汁状态更突出,可以混合1/2tbsp蜂蜜+1/2腌肉汁扫在肉上,每翻一次面扫一次

梅干菜五花肉

食材:带皮五花肉一条,梅干菜,酱油,老抽,冰糖
步骤:
1. 梅干菜泡至少一小时拧干备用,过滤掉梅干菜水里的砂子,泡梅干菜水留着备用
2. 切好的五花肉中小火煎至两面金黄,下泡好的梅干菜,等梅干菜炒出香味后,转大火倒入泡梅干菜水,再加水没过所有食材
3. 水沸后下调料,转中小火焖到水干、五花肉size缩成原size的3/5即可

烤箱自制腊肉
食材:带皮五花肉一条,盐,料酒,酱油,糖,姜末,老抽
步骤:
1. 先在五花肉上薄撒一层盐,腌0.5-1小时

2. 洗去浮盐,拿一个大碗混合盐,料酒,酱油,糖,姜末和老抽,调料分量依个人喜好增减,喜欢甜的多放糖,喜好咸的多放酱油,不喜欢颜色深可以省略老抽,(其实我娘亲做的腊肉就是白白的,可是无敌香~),调好的腌汁倒进密实袋,再把洗干净的五花肉塞进密实袋密封,入冰箱腌8-24小时

3. 腌好的肉入烤箱以250度烤3-4小时,中途至少要翻一次面,大概烤到下图那么紧实的状态就可以了

材料:中国茄子2条,五花肉1磅,葱蒜适量,蚝油,酱油,老抽,水淀粉
茄子预处理tips:
茄子切成需要形状后,在表面薄撒一层盐静置半小时,出水后的茄子相对吃油更少,也更容易煮熟

步骤:
1. 五花肉切片或切条,炒锅中小火加热,下五花肉慢煎出油,大概10-15分钟翻一次面,煎大概半小时至两面焦黄

2. 煎五花肉的同时对茄子进行切条预处理,五花肉煎好后盛起待用,转大火下预腌过的茄子、葱头和蒜

3. 茄子8成熟后下五花肉、蚝油酱油翻炒均匀,因为茄子预腌过有盐味,下调味的时候可以少下一点,想要颜色更深的话稍下点老抽

4. 翻炒均匀后,下淀粉水和葱花,淀粉水熟了就可以装盘了~

不吹不黑,我们家晚餐通常是不吃主食的,但凡只要做了以上任何一款猪料理,必须要配白米饭,而且我还会添饭...非得把自己撑到要狂喝普洱才能解撑的状态
