百忙中抽空给大家分享一款奶茶控的最爱奶茶戚风蛋糕,在原味基础上添加了浓郁的奶茶味,赋予了戚风蛋糕另一个风味,而且还非常容易上手,烘培新手们的福音,喜欢奶茶味的宝宝们千万不要错过这款奶茶戚风蛋糕哦~^_^
今天分享是6寸的奶茶戚风蛋糕

材料有:牛奶60克、低筋面粉60克、伯爵奶茶包5包、鸡蛋3颗、细砂糖55克、玉米油35克、淡奶油100克、糖粉10克、奥利奥饼干2块、几滴柠檬汁和香草精、一小撮盐~

首先先把60克的牛奶放入微波炉加热35秒~

接着把这款伯爵奶茶包放入3小包浸泡在牛奶中~用勺子轻轻按压奶茶包让奶茶味更浓郁一点~
🌿温馨提示🌿:如果买不到这款伯爵奶茶包,可以用红茶包替代,再不然就用速冲奶茶粉替代~

然后把奶茶包挤出来,尽量让奶茶味更浓郁一点~

接着称出100克的淡奶油倒入一块无水无油的容器中~

接着把淡奶油放入微波炉加热35秒后,放入两包新的奶茶包浸泡在淡奶油中,用保鲜膜包裹起来放入冰箱冷藏,待会做淋面用~

接着把鸡蛋的蛋黄和蛋白分离出来倒入无水无油的容器中,备用~

接着用手动打蛋器搅散蛋黄后,倒入35克的玉米油用手动打蛋器搅拌至完全吸收~

接着倒入刚才泡好的奶茶,用手动打蛋器搅拌均匀~

接着撕开刚才浸泡过的奶茶包,倒入两包的奶茶叶,搅拌均匀~

接着过筛筛入低筋面粉,继续用手动打蛋器搅拌均匀~

接着滴入几滴香草精,继续用手动打蛋器搅匀~
最后加入一小撮的盐搅拌均匀后,奶茶蛋黄糊就完成了,放置一旁备用~

接着来打发蛋白霜,55克的细砂糖分三次加入蛋白霜中~
🌿温馨提示🌿:烤箱开始预热,300华氏度20分钟

蛋白霜用电动打蛋器打发至体积膨胀两倍以上,滴入几滴柠檬汁,帮助稳定蛋白霜,继续以低速打发~

蛋白打发至粗泡后加入第一次的细砂糖,继续以低速打发~

蛋白打发至表面出现纹路,接着加入第二次的细砂糖,继续以低速打发~蛋白打发至湿性发泡后,加入剩余的细砂糖,继续以低速打发,个人比较喜欢全程用低速打发,这样打发出来的蛋白霜质地比较细腻光滑~^_^

打发至提起打蛋器出现小尖勾,差不多就是干性发泡了,不要再打发了,打发过头的蛋白霜,会使烤出来吃起来口感不佳~

然后先舀1/3的蛋白霜到蛋黄糊中,用切拌结合翻拌的手法进行混合,大致均匀~
接着搅拌大致均匀的蛋黄糊倒入剩余的蛋白霜中,再以切拌结合翻拌的手法进行彻底混匀~
🌿🌿🌿温馨提示:搅拌的时候切记大力的画圈圈,过度的搅拌会使蛋白霜消泡,使烤出来的蛋糕严重开裂变形~

搅拌均匀的奶茶蛋糕糊质地浓稠细腻~

接着倒入像这种空心的6寸模具中,如果没有这款模具,平常的6寸活底模具也可以~

搅拌均匀后的蛋糕糊倒入已经垫了烘培纸的6寸活底模具中,倒入大概7分满左右,震几下送入已经预热好的烤箱300华氏度烤40分钟左右~
🌿🌿🌿温馨提示:每个人家的烤箱温度都有相差,根据自己家的烤箱温度来适当的调整~^_^

烤好的蛋糕出炉后震几下,然后倒扣在烤架上放凉备用~

蛋糕彻底放凉后,就可以来打发刚才浸泡奶茶包的淡奶油,把奶茶包挤出,我这里临时决定再淡奶油中加入了奥利奥饼干碎,因为我家孩子们喜欢~这里加不加奥利奥饼干碎根据自己的口味选择~

淡奶油中加入10克的糖粉用电动打蛋器打发至6成分,表面开始出现纹路还可以流动的状态~

接着把打发好的淡奶油装入裱花袋中~

用剪刀在裱花袋剪个小口,把淡奶油挤在蛋糕边缘,故意做出淡奶油流下来的效果,接着再挤满蛋糕表面,用抹刀抹平整表面~

接着用可爱的草莓装饰一下表面,再筛上糖粉这款草莓伯爵奶茶蛋糕就完成了,是不是很简单~
