榴莲控的我今天又忍不住做了榴莲夹心面包,这款小面包非常好吃,口感也很棒......所用模具的大小为26x26x6。

【中种面团】 高筋面粉+牛奶+酵母混合放入厨师机里

揉成光滑的面团即可,没有厨师机的用手揉也可以

盖上保鲜膜,常温发酵3-4个小时,冰箱冷藏发酵12-24个小时

【主面团】 把黄油外的主面团材料混合放入厨师机里,再把中种面团掰成小块放进去,混合揉至扩展阶段后,约8-10分钟,然后加入黄油,继续揉至完全,能拉出柔韧的薄膜

然后盖上保鲜膜醒面20分钟

【榴莲馅】 纯榴莲肉+奶油奶酪+细砂糖+低筋面粉混合搅拌均匀

然后放入冰箱冷冻2个小时左右,让其变硬,容易被包进面团里。但也不要让它变太硬哦,否则难以切块......

醒面后,把面团分成9等份,每份大约65-66克,然后把每一个面团都包入榴莲馅,馅约26-28克一份

记得把收口收好,放到烤盘上(模具为26x26x6的),进行发酵,发酵到体积变成两倍大,约45-60分钟........

发酵好后,在表面上刷上点牛奶,然后放入预热好的烤箱,大烤箱放中层,小烤箱放中下层,350华氏度(180摄氏度),烘烤25分钟
