三杯鸡是台湾名菜,据说起源于江西省民间,如今成为台菜的代表性名菜。不过大家知道三杯鸡的三杯是哪三杯吗?江西早期的做法中的三杯里不放水,而是米酒一杯、猪油一杯、酱油一杯;到了台湾以后,猪油换成了麻油,并在里头加入了九层塔,甜中带咸,肉香芝麻油香交相呼应,搭配非常美妙。今天我就用了台菜三杯鸡的调味,做了三杯豆腐杏鲍菇,食材简单却好吃到爆炸!素食者的朋友也一样可以享受(我在里头加了午餐肉,吃素的宝宝去掉即可)。对三杯豆腐杏鲍菇感兴趣的宝宝,就请看下去吧~

三杯豆腐杏鲍菇所需食材
主材料:
- 老豆腐 半盒
- 杏鲍菇 1-2根
- 午餐肉 半盒

配料:
- 九层塔 叶片约15片
- 蒜瓣 1-2瓣

三杯酱汁:
- 老抽 1 tbsp
- 生抽 2 tbsp
- 米酒 3 tbsp
- (可选:1小勺老干妈油辣椒)

调味:
- 冰糖 8-10颗
- 麻油 1 tbsp

三杯豆腐杏鲍菇做法
1. 把豆腐切成2.5cm大小的方块,午餐肉切薄片,杏鲍菇滚刀块;九层塔洗净,蒜切片;

2. 豆腐放油锅炸至金黄;

喜欢吃脆口感的可以趁油炸的时间把杏鲍菇和午餐肉也过下油;我用了空气炸锅10分钟,很方便;所有材料炸完后备用。

3. 锅中放油,大火爆香蒜片,之后转中火放入冰糖,炒糖色;

4. 抄完糖色后,加入杏鲍菇、午餐肉和豆腐,翻炒均匀;

5. 将入酱汁,翻炒2分钟左右,火力转小火,焖煮3分钟;

6. 出锅前加入九层塔和麻油即可。

毫不夸张的说,这次做的三杯豆腐杏鲍菇是我做过的最最好吃的素菜做法了,我本人很喜欢甜咸搭配,所以这道菜实在太对我胃口。因为没有水稀释,全程的所有酱汁都被杏鲍菇和豆腐吸收,满嘴都是酱香,真的是比肉还好吃!
