不知不觉情人节到了,满大街都是耀眼的粉红色,还有各式甜腻的美国甜点。
Cupcake应该说是美国甜点的标志性代表了,但是对于亚洲人来说,美式的Cupcake虽然貌美,但是糖霜太过甜腻,蛋糕底又太干。
最近发现了这个方子,我做了一些改良,在家也能轻易做出来。
草莓的酸酸甜甜中和了糖霜的甜腻,给蛋糕增加了果粒的口感和湿润度,也让杯子蛋糕呈现出天然的粉嫩~

平时不做糖霜,单做蛋糕也是非常好吃!C先生说这是他吃过最好吃的杯子蛋糕了~

原料(8-9个)
建议所有材料都放置到室温,更好打发,做出来效果更好。
蛋糕底材料:
大草莓 5-6个
1/2个全蛋+1个蛋白
1 Cup(250g)All purpose flour
1/8 Cup(15g)玉米淀粉
1 1/4 tsp 泡打粉(baking powder)
1/4 tsp 盐
90g 无盐黄油,室温软化
3/4 cup(150g) 糖 (可略减)
1 1/2 tsp 香草精
1/2 cup(120ml) 全脂牛奶,室温
(1tsp≈5g)
蛋糕底制作过程:
1. 烤箱预热350℉(177摄氏度),在马芬模具里放上🎂Cupcake纸杯。
2. 草莓🍓切一大半放到搅拌机打成有颗粒状态,其他草莓🍓切小块备用。
3. 1.5个蛋白🥚打到湿性发泡(刚能拉出尖尖)

4. 面粉+玉米淀粉+泡打粉+盐混合

5. 黄油高速打到顺滑(1 min)+糖高速打发(4 min)

6. 加蛋黄、香草中速混合。把粉类和牛奶🥛交替倒入混合到刚刚均匀,+蛋白、草莓酱、草莓碎切拌。

7. 倒入纸杯1/2杯到2/3杯满。烤20-25 min。牙签插入拔出干净无残留就好。晾凉备用

糖霜材料:
1/4 cup(10g左右)草莓粉(也可以买冻干打碎)
120g 黄油,室温软化
2 cup(240g)糖粉(confectioner’s sugar)可略减少
1.5 tbsp(25ml)奶油
1/2 tsp 香草精
盐适量
糖霜制作:
1. 黄油中速打到顺滑(2 min)。+糖粉、草莓粉、奶油、香草精,高速打3 min。(Kitchen Aid真呀真好用)如果糖霜稀了可以加糖,太厚了可以加奶油。
2. 放入裱花袋装饰就完成啦~
酸酸甜甜的草莓也很适合春天哦~樱花季马上也要到了,樱花和草莓很搭😜
