最近看着疫情一天天地严重,连发晒货的心情都没了,停课停工,天天在家带着几个娃我都快要疯掉了,今天来做点甜品增加点安多芬,愉悦一下心情……

蛋糕胚材料
鸡蛋 5个(Grade A Large)
牛奶 50克
玉米油 40克
低筋面粉 50克
细砂糖 55克
盐 1小撮
柠檬汁 4克
虎皮材料
蛋黄 9个(grade A Large,约150-160克)
细砂糖 40克
玉米淀粉 15克
柠檬汁 3克
夹馅材料
heavy whipping cream (Cool whip)

牛奶+玉米油混合搅拌均匀

接着可以预热烤箱,180摄氏度(350华氏度)......

打发蛋白,蛋白加入1小撮盐后开始开动打蛋器高速打发,打发至鱼眼状态后加入柠檬汁,再继续打发至出现白色小泡沫后分两次加入细砂糖,打发至硬性发泡即可......

把一半的蛋白霜加入面糊里翻拌均匀, 再把混合后的面糊倒回入剩余的蛋白霜里翻拌即均匀

把面糊倒入28X28x3的蛋糕盘里,震出气泡

放入预热好的烤箱,180摄氏度(350华氏度),20-22分钟。
烤好后,拿出来稍凉后脱模,接着先把蛋糕空卷起来定型5-10分钟,往哪边卷都一样😊随意
这个时候定型过的蛋糕胚已经有折过的纹路,待会凉了之后再卷的时候就容易多了,而且减少了裂卷的可能性。
接着在蛋糕上抹上一层heavy whipping cream(cool whip),再把蛋糕卷起来放入冰箱冷藏定型20分钟。(卷的时候心急忘记照相📷了……🤣🤣)

接著來做虎皮蛋糕层,首先预热烤箱,大烤箱参考温度:200摄氏度(400华氏度),小烤箱参考温度190摄氏度(375华氏度).......
把蛋黄和细砂糖混合一起搅拌均匀后再加入柠檬汁(辟除蛋腥味)

开动打蛋器高速打发,至体积变大,出现清晰纹路即可。

把蛋黄糊倒入28x28x3的蛋糕模具中,抹平整,震出气泡

放入预热好的烤箱里,烘烤约10分钟,途中要注意上色度,上色度差不多就可以了,千万不要烤过头了,不单是怕烤焦面部,烤久了也会变得太干,卷的时候容易开裂哦……

烤好拿出来放凉后,脱模,在底面抹上一层cream,然后把之前卷好的蛋糕卷放在中间包起来,再放回冰箱冷藏定型15分钟即可……
