说到海蛎饼大家肯定都知道是哪里的美食啦.一直都馋了好久,宅在家里就动手研究起来啦.材料,设备齐全.就剩行动啦.

海蛎饼重要的精华部分就是它的皮啦.皮是用黄豆跟大米一起浸泡一个晚上,第二天用破壁机磨成浆

磨好的浆是这样的糊状的..家里人喜欢皮薄的,可以调稀一点,黄豆可以多放一些,皮会更酥脆.
馅的做法

切好的包菜跟韭菜混合,紫菜用开水稍微烫一下,然后沥干水分,跟包菜韭菜籽菜全部混合,加一些盐巴味精调味料.

猪头切成丁,用酱油,味精料酒腌制一下.

海蛎饼的勺子
做海蛎饼需要专门的勺子(长柄,勺面圆,比较平)用火🔥烧,烧出金色,然后旁边准备好烧好的滚汤的油,把勺子浸在油里.

🧚♀️步骤
1: 用小勺取一团面糊,倒入大勺中心,用勺压一下面糊使其成为一个圆形的饼底。
2: 依次谱上一小把包菜,两到三颗海蛎,一只海蛏,两小块肉,一小坨紫菜,再盖上一小把包菜,用手稍微聚拢。

3: 再用小勺取面糊,可以取多一点,从陷的中心往下倒。陷没有被面糊盖住或者盖不够厚的地方,再取一些,往下倒。可以局部用点的方式补面糊,但是千万不可以用勺底去抹, 容易出现太薄爆陷的情况。

4:覆盖好面糊后,再加上几颗花生.
5:不粘锅烧热,倒入油,油要相对多一些,待油温升高的时候,海蛎饼就可以下油锅炸了.

6: 待海蛎饼颜色变得像深棕黄的时候,就可以捞出沥油,装盘。一盘准备好沥油的盘子.

香喷喷的海蛎饼出锅啦,皮薄,馅多,家里人的最爱,配豆浆,配锅边都是满满的爱.. 一次吃上两三个不是问题.

这次的海蛎饼很成功,海蛎饼的关键就是皮,黄豆至少要泡发一夜,浆磨的越细腻越好.比较浓稠的米浆,成功率会更高.
