说起咖喱系列的菜肴,你一定不陌生,全世界都在吃咖喱,咖喱酱、咖喱粉、咖喱块,宅家季前夕被一抢而空。

但是呢,印度人做菜其实根本就不放咖喱粉,之前去一个印度朋友家做客,被她家五花八门的香料完全圈粉,哪怕是站在厨房里看着她,你也完全不知道她到底往锅里放了什么调味料,每个印度家庭都有属于自己的香料配方,调配出独一无二的咖喱味道,是一个家庭传承下来的家族味道。

如果你妄想着用咖喱块炖煮出正宗的印度味道,就仿佛是想用火锅底料复制正宗的四川火锅味道一样痴心妄想,不可思议,是完全不可能完成的任务。

今天跟大家分享个我常用的方子,会用到一些超市里能够买到的印度调味料,虽然算不上独一无二,但味道比起用咖喱块咖喱粉做出的料理,可好吃多了。顺便,我还配了个印度烤饼,一边撕饼,一边蘸食咖喱,感觉可好了。

先把鸡肉切块,加入孜然、辣椒粉、盐、姜黄粉Turmeric、混合香料Garam Masala、原味酸奶和蒜末姜末腌制过夜。

姜黄粉Turmeric是很常见的一种调味料,而且很多研究表明,姜黄粉对身体有益,在对抗抑郁症、增强身体抗氧化性,提高脑力,降低心血管疾病方面,都有很积极正面的作用。
混合香料Garam Masala其实是有很多种调味料磨成的粉末,香料是印度菜肴的精华,选择超市里常见的Garam Masala不失为一种投机取巧、炮制美味的好办法。

我家里没有洋葱了,捶胸顿足一番,否则应该是西红柿切丁、洋葱切丁备用。而且热锅凉油炝锅时候也应该是先放洋葱,炒到洋葱变色发焦才好,再加入桂皮、草果、香叶、丁香和豆蔻炒香。

接着加入西红柿碎和腌好的鸡腿肉块翻炒,加入热水没过所有食材,铸铁锅炖煮一个小时左右,如果觉得味道不够的话,可以再加入辣椒粉和盐提味,出锅撒上香菜碎就好了。

下面我们来做印度烤饼,这个烤饼我个人非常喜欢,而且得到过印度小伙伴的认可,做法其实不难,等待面团发酵的时间比较长,需要有点儿耐心,真正上锅烤的时间非常短。相信我,好吃得转圈圈,我用它配印度菜、新疆菜,甚至是欧洲菜肴,都是百搭。

用150g原味酸奶和400g水混合,加入12g糖、8g盐、25g油和4g酵母粉搅拌均匀后加入750g中筋面粉,只需要揉成一个大面团就好,醒面20分钟。

在案板上抹油,把面粉成10个小面团,在每个面团表面都抹上一点油,再醒发30分钟。

等待的过程中,来做蒜蓉酱,20g蒜蓉加盐调味,倒入20g黄油里,在小锅里炒香,放凉后加入香菜碎。

面团醒好后,用手按压几下,再在左右手间来回甩上几下,很容易就成一个面饼了,放入已经在灶台上烧热的平底锅里,或者用铸铁锅效果应该会更好,因为铸铁锅非常能够保温,小火就能把温度保持在很稳定的高温,把面饼放上去,盖上盖子,几分钟就烤熟了。

我每次都会烤很多张,吃不完的就放进Zip Bag里,放入冰箱冷冻室,吃的时候拿出来用烤箱、平底锅或者空气炸锅加热一下,味道完全不会改变,好吃如初。
