✨今年由于yq关系,不敢去买外面的蛋糕吃,那只能在家里自己动手做起来吧!在家里能做蛋糕无疑是十分惬意,可以做给家人和心爱的人吃,那种成就感也是无法言喻的!
✨最近流行提倡不浪费,眼看冰箱里的heavy cream就快过期了,要消耗掉不要浪费,趁着是我家小公主的生日,给小公主做个千层蛋糕。这次做了个颜值高的千层——雾霾蓝蝶豆花千层蛋糕,蝶豆花捎来唯美的蓝色,零色素添加的蝶豆花千层,口感丰富,颜值高又好吃!

千层蛋糕,做起来很简单,只需要一个平底锅。除了要摊很多张饼皮有点点繁琐。不过学会了以后,毛巾卷、可丽饼就都会啦,因为都是同样方子,不同造型嘛!
✨千层皮材料:
蝶豆花 — 8g
牛奶 — 330ml
鸡蛋 — 3个
低筋面粉 — 80g
玉米淀粉 — 15g
黄油 — 30g
白砂糖 — 30g

✨夹心材料:
淡奶油 — 450g,糖35g

✨做法:
1⃣️ 蝶豆花加入牛奶,小火煮至微沸,关火焖5分钟,用力压榨出蝶豆花牛奶,过筛晾凉待用

2⃣️ 鸡蛋打散,加入糖搅拌均匀

3⃣️ 筛入低筋面粉、玉米淀粉,搅拌均匀

4⃣️ 牛奶分2-3次加入,每次都要搅拌均匀后再加入

5⃣️ 牛油隔热水融化, 倒入牛奶面糊中搅拌均匀

6⃣️ 过筛两遍得出细腻面糊,然后放冰箱冷藏1小时

7⃣️ 平底锅烧热转小火,刷一点点油,一勺面糊倒入平底锅提起锅绕一圈使锅内都粘上面糊,大约10秒翻面煎一会,观察到面糊变色起泡就可以从边缘掀起,重复煎完所有面糊

8⃣️ 做好的千层皮放在一边晾凉,备用

9⃣️ 淡奶油加糖打至纹路清晰,备用

1⃣️0⃣️ 盘子中先铺上一张饼皮,再抹一层奶油,奶油放在中间用抹刀向外推开,不要涂满要留一厘米。一层饼皮,一层奶油叠加,依此重复完成✅ 然后放冰箱冷藏4小时以上。

⚠️小贴士:
1⃣️ 没有蝶豆花可以忽略煮牛奶那一步 直接用牛奶即可做成原味的
2⃣️ 面皮的厚薄要多次把握,一下倒太大勺的话,一定要把多余面糊倒出来,不然会很厚哦。
3⃣️ 每层铺完,放上一层饼皮之后,用手轻轻地压一下中间,往四周擀一下,让蛋糕始终是平的,避免中间过厚,四周过薄。
4⃣️ 记得全程要保持小火烙千层皮。
