我对东南亚地区的美食总是有着谜之热爱,泰国菜、新加坡菜、越南菜、马来西亚菜、印尼菜等等,那里的厨师对于香料的运用简直到了出神入化的境地,通过薄荷、紫苏、青柠、香柠等等新鲜香料的配搭,做出酸辣重口、轰炸味蕾、直击灵魂的东南亚美味。

我对橘色的泰式奶茶向来都没什么抵抗力,每次去泰国餐厅都会点上一杯,宅家季已经许久没喝过了,甚是想念。幸运地被君君选中,参加了太子牌泰式奶茶的微众测,甚是开心,正好也有机会尝试一些以泰式奶茶为基底的甜品凉品的方子,给像我一样热爱泰式奶茶的小伙伴们做个参考吧。

泰式奶茶
最纯正的泰式奶茶需要用到红茶茶叶,最经典的品牌当然是Cha Tra Mue手标牌,我一直用的都是他家的红色包装的,茶味更加浓郁。
简单来说下制作过程,茶叶和水按照1:4的比例冲泡,用滤茶袋或者咖啡滤纸过滤掉茶叶后,拿两个容器,把茶水在两个容器中不停地倒来倒去,再加入炼乳、糖和鲜奶,让泰式奶茶呈现美丽的橘色,最后一步,当然就是反复拉茶了,通过奶茶和空气的接触,让口感变得更加香醇浓郁。

那如果想要偷懒,有想要好味道呢?推荐小伙伴们可以去试一下太子牌泰式奶茶,冲泡方法很方便,热饮冷饮均可,包装上有非常详尽简单的冲泡水粉比例。几分钟就能再现泰式奶茶浓郁香醇的味道和橘色芬芳的色彩,实在是很不错,平时工作繁忙,或者在野外露营的日子里,也能喝到美味的泰式奶茶了!

泰式奶茶千层蛋糕
千层蛋糕是我家都很喜欢的,但是因为和一般戚风蛋糕相比,做起来会更加需要耐心一点儿,所以我并不常做。也是借着拿到泰式奶茶粉的微众测活动,一时兴起,做了个泰式奶茶千层,味道口感绝佳。

先来说饼皮的原料,牛奶650g,低筋面粉cake flour 240g,细砂糖Caster suger 90g, 鸡蛋四个,黄油50g,泰式奶茶粉适量。低筋面粉、泰式奶茶粉、细砂糖和少量的盐,用蛋抽搅拌混合,加入鸡蛋,打散,分几次加入牛奶以及水浴法加热过已经融化的黄油,轻轻地搅拌均匀,过筛,记得把面糊放入冰箱冷却一个小时左右。

我还是用的煎饼果子机,不粘锅也可以,用厨房用纸擦上一层油,倒入面糊,一张一张耐心地煎熟就好,煎好的可丽饼放在一旁室温冷却,然后用圆形模具切成大小一致的圆形饼皮。

等待的时候来准备打发奶油,Heavy Cream 600ml,细砂糖30g,香草精几滴即可,我这里又加了一些泰式奶茶粉,所以奶油也有了泰式奶茶的味道。类似于水浴加热法,只是把下面的热水换成冰块,把砂糖、香草精和泰式奶茶粉加入Heavy Cream中,Z字形打发,直到奶油开始变得浓稠起来,就可以开始用画圈圈的方法来打发了,奶油表面开始出现纹路的时候就差不多了。

最后就是一层可丽饼,一层奶油地叠加起来,做好之后把千层蛋糕放入冰箱三四个小时冷藏定型,这样切蛋糕的时候会更好看。

可丽饼如果太大了,用模具切掉就好,小朋友会帮忙把边角料都消灭掉的,绝对不会浪费。如果要是做小了,就没办法了,只能随便裹上奶油,当下午茶的小零食吃掉了。

泰式奶茶冻
泰式奶茶冻,用勺子舀着吃的泰式奶茶,Q弹得很,奶茶味道也特别的浓。

一小袋吉利丁粉,大概是7g,放入一小袋太子牌泰式奶茶粉,加入100g左右的凉水,搅拌均匀,让吉利丁粉散开,接着加入130-150g左右温热的水,让吉利丁粉完全溶解,搅拌均匀。接着倒入小杯子容器里,放入冰箱冷藏4个小时,取出来稍作装饰,就成了一杯可以舀着吃的泰式奶茶冻。

泰式奶茶冰激凌
一袋太子牌泰式奶茶粉,200g温水+300g牛奶,这里没有特意增加水量或牛奶稀释,主要是因为冰激凌是需要一定的甜度的,冷冻后味觉敏感度会下降,常温下吃很甜的东西在低温时候也会觉得刚刚好。

6个鸡蛋黄和20g糖用手动搅拌器打发到体积开始膨胀,颜色变浅的时候,分两次倒入泰式奶茶,同时用蛋抽搅拌,小心温度,不要把蛋黄变成蛋花汤了。为了灭菌,把蛋黄泰式奶茶溶液倒回锅里,小火加热,同时不住地搅拌,随着温度的不断升高,混合溶液会变得浓稠,可以挂在刮刀上的时候就可以关火了,放凉备用。

接着来打发淡奶油,500g的whipping cream,加入30g糖粉,打发到出现纹路,大概8成左右,倒入放凉的蛋黄泰式奶茶的混合溶液,翻拌法和淡奶油混合均匀,这个鲜亮的橘色实在是让人着迷。接着就放进密封玻璃器皿,冷冻6个小时左右。

吃的时候可以放在室温下回温5-10分钟,然后就很容易挖出冰激凌球了。

泰式奶茶麻糬
下面来做泰式奶茶麻糬,方法其实和糯米糍一样,喜欢吃麻糬冰激凌的只需要在糯米团子包进泰式奶茶冰激凌,就好了。我本来也是这样计划的,可是没想到糯米小团子太受欢迎,被吃光了,下次有机会再来尝试泰奶麻糬冰激凌吧。当然,你实在想吃,又懒得自己动手,晒货区小伙伴推荐的Trader Joe's家的Thai Tea Mini Mochi也很好吃。

75g糯米粉、20g油和10g的糖混合均匀,分几次加入135g泰式奶茶,因为奶茶里已经有糖了,所以我这里只额外加了10g的糖,味道就足够了。奶茶糯米糊放入蒸锅,大火蒸20分钟,用刮刀趁热搅拌一下,让糯米团子变得更加均匀。等到温度稍微下来一些的时候,用蘸过水的刀切成小块儿,随便撒上点儿椰子碎就特别好吃呢。

泰式奶茶碗
我很喜欢吃那种有点儿弹性口感的凉品,一晃就像小柯基的屁股似的,duaiduai的,所以奶茶碗总是能让我特别开心,我这次还是用到了一小袋太子牌泰式奶茶粉,做出了颜色丰富、超级解暑的泰式奶茶碗。

先准备大约7-8g左右的吉利丁粉和一袋太子牌泰式奶茶粉,搅拌均匀后加入100g左右的凉水,让吉利丁粉散开,接着加入130-150g左右温热的水,让吉利丁粉完全溶解。接着倒入方形的玻璃容器里,放进冰箱里冷藏4个小时。

取出来后切成正立方体小块,放在碗里,配上糯米小丸子、花生坚果碎、烧仙草、黄桃、杏仁和冰激凌球,你还可以再加上芋圆、紫薯球、红豆沙、芒果块等等一切你喜欢的食材,这碗用料丰富、让人满足感爆棚的泰式奶茶碗,你要不要也来一碗?

泰式奶茶曲奇
先要声明一下,我这款曲奇的纹路并不十分清晰,主要是为了减少糖的摄入,原料里用了300g无盐黄油、45g糖粉、2g盐、320g低筋面粉和小半袋太子牌泰式奶茶粉。糖粉在曲奇饼干定型上有着至关重要的作用,当然还有黄油的软化和打发。如果你对曲奇造型更在意的话,建议把糖加到60g到80g之间。下次准备尝试一下用糖粉和砂糖混搭,看纹理会不会更清晰一些。

隔水加热到黄油开始融化,用打蛋器搅打,黄油在打发的过程中逐渐变白变软嫩。接着分两次加入过筛的低筋面粉和泰式奶茶粉,搅拌均匀。

最后,把面糊装入裱花袋,挤出你喜欢的漂亮的曲奇图案,放入到预热365F的烤箱里,烤15分钟,刚刚上色就好了。
